Fruition ChocolateFruition Chocolate was created in 2011 by Bryan Graham located in Shokan, NY. Graham, was always interested in pastry as a young boy and has worked his way as a pastry chef. Over the years, Fruition is keen on exceptional attention to detail from the calibration of ingredients, packaging, and appearance of the bar (mold, snap, color) make them one of our top bean to bar craft chocolate makers in the world. Fruition has won many awards for their bars over the years, including ‘Best in Competition” Fruition was one of the first bean to bar makers to experiment with new concepts such as bourbon-barrel aging and creating bars with just two ingredients.
Cacao Region
Tumaco, ColombiaTumaco is a port city & municipality in the Nariño Department, on the Pacific Ocean side of coastal Colombia. It’s located less than 30 miles from the border with Ecuador, and enjoys a year-round tropical rainforest climate, even on the region’s many beaches. Most of the residents of Tumaco are Afro-Colombian or indigenous peoples, many of whom rely upon agriculture to make their living; largely in either rice, oil palm, or cacao.
This bar is a great example of this origin - fudge, lots of wood/nutty flavors and little acidity. Some bars from this region have an unpleasantly strong astringency but it is balanced well in this bar. Excellent, silky smooth texture and not particularly bitter, especially for an 85%!
This bar reveals a very harmonious palate distinguished by blackberry, toffee and chocolate cookies notes.
A dark bar that isn’t overly bitter (as some 85% can start to get), with a very strong fudginess to it. It’s quite smooth on the palette and the strong chocolate flavors linger.
A smooth, silky, fudgy bar with a little nuttiness and a little berry tartness (I would definitely agree with the "brownie" and "blackberry" claims on the label's tasting notes).
This Fruition 85% Tumaco, Colombia bar is very nice. It has a smooth melt, some berry fragrance, and a nice, strong chocolate flavor. Highly recommended! (As a plus, the 60 gram bar weighed 66 grams.)
