Former boat makers and carpenters, Adam Dick and Dustin Taylor were intrigued by the new and challenging trend, craft bean to bar chocolate. They started making chocolate in a 500 sq. ft. space in Arcata, CA in 2010. Their chocolate business,  Dick Taylor, quickly evolved, and grew from their love and meticulous attention to detail. Their space in Eureka, CA boast their careful craftsmanship; into an interesting appearance with sharp letterpress packaging and an intricate, pretty mold. Dick Taylor also pushes the traditional methods of chocolate making to coax the maximum “pure” flavor they can from their beans and for their single origin chocolates. They support and purchase their beans through direct trade working directing with the farmers. Most of the bars in their collection are made from only 2 ingredients. They have won multiple awards for their bars in a few short years. Dick Taylor has ventured into rare parts of the jungle to find cacao beans no one has used before. They are constantly keeping up with the demand for chocolate but never cutting any corners to always provide the best chocolate.

Pretty Tasty

The flavor of the ginger didn't come through as much as I thought it would, but I was pleasantly surprised by the nice crunch that it gave the chocolate. Would recommend for a try.

Absolutely fabulous!

It sounds strangely specific, but I swear this tastes like the M&Ms I enjoyed in my childhood. I absolutely love it, because if I tune into the spices I can elevate the overall flavor, but if I'm just looking for a less-sweet blast from the past, it's there. I already can't wait for the next season of these bars!

Dick Taylor Ginger Snap Milk 55%

Goos snap. Caramel color. The sweet smell of milk chocolate and ginger cookies awakens the pleasure for all the senses. The aspect I like the most is the fabulous creamy-crumble texture. The milk chocolate - with upfront earthy undertones - dissolves quickly while the tiny bites of cookies remain a long time on the palate reinforcing the ginger spicy finish/aftertaste. White pepper/cayenne spike on the tip of the tongue. If you like sweets and you need to loosen up your mood to some moments of indulgence and joy, I think you would not be able to cherish it for very long. It is very easy to eat!
