Beginning with the highest quality cacao from Brazil, we set out to create a chocolate bar unlike anything else we make. We began by aging cocoa nibs in Alchemy Distillery's Straight Bourbon Whiskey barrels for five months. Once fully aged, we use these delicious nibs to create a 70% Dark Chocolate bar adding only cocoa butter and cane sugar. The resulting bar is amazingly robust and complex with pronounced oak and bourbon flavors. A true one of a kind tasting experience.
Using the finest cacao and traditional European techniques, all Dick Taylor Chocolates are carefully crafted from the bean in their small factory in northern California.

Dick TaylorFormer boat makers and carpenters, Adam Dick and Dustin Taylor were intrigued by the new and challenging trend, craft bean to bar chocolate. They started making chocolate in a 500 sq. ft. space in Arcata, CA in 2010. Their chocolate business, Dick Taylor, quickly evolved, and grew from their love and meticulous attention to detail. Their space in Eureka, CA boast their careful craftsmanship; into an interesting appearance with sharp letterpress packaging and an intricate, pretty mold. Dick Taylor also pushes the traditional methods of chocolate making to coax the maximum “pure” flavor they can from their beans and for their single origin chocolates. They support and purchase their beans through direct trade working directing with the farmers. Most of the bars in their collection are made from only 2 ingredients. They have won multiple awards for their bars in a few short years. Dick Taylor has ventured into rare parts of the jungle to find cacao beans no one has used before. They are constantly keeping up with the demand for chocolate but never cutting any corners to always provide the best chocolate.
The nose has a sweet aroma, with notes of flowers, vanilla, caramel, oak, and chocolate. The Belize 72% dark chocolate acquires an exceptional flavor owing to the environment in which the cacao nibs are aged. The Bourbon straight barrel whiskey acts as a filter that changes the mouthfeel. The first taste of tart cherry creates a unique fruity sweet first impression on the palate preparing the taster for entry into the corresponding gustatory sensations: a velvety hart of creamy chocolate hidden in a rich oak-bourbon spectrum. Highly recommended!!!
We were pleasantly surprised by this bar. It has become a new favorite— enough so that we decided we needed to stock up on a few bars as it is a limited release. It has a very complex flavor. At first, it tastes a bit bitter (in a good way) but soon melts into smooth and slightly sweet with a hint of bourbon. It’s so well done!
**** Taylor can do no wrong in my book. My boyfriend enjoys this bar. Strong like for me but my all time favorites are the nibs and sea salt bars.
The bourbon notes really shine as a finish to a delightful 70% bar. The bourbon does not overpower the chocolate at all, but is definitely there. It's a very tasty combination.
