Hacienda Victoria is located in Ecuador, a fertile land that has been considered sacred for thousands of years. The ideal climate and sustainable agricultural practices produce a cacao with a fruity aroma and strong chocolate flavor. Hacienda Victoria produces Arriba Nacional cacao, cultivated using ancient and traditional methods used to grow the "fruit of the gods", pure and free from contamination by CCN51. On tasting, it offers extreme elegance and an absolute note of white flowers.

DomoriDomori is a gourmet Italian chocolate maker that focuses on making bars with low production process. They use a low roast profile and medium conch (the stage in which chocolate gets its characteristic taste and mouthfeel from cacao beans) to preserve and maintain the aromas and flavors of the fine cacao beans they feature in their bars. Founded by Gianluca Franzoni in 1997, they are considered one of Europe's finest chocolate makers. Franzoni traveled to Venezuela to help develop a business model to reposition cacao but was ultimately fascinated by cacao itself. He experimented with different varieties to help preserve Venezuela’s biodiversity and even helped prevent the extinction of the Criollo beans. Domori is the first company to use the fine Criollo variety, which is considered the rarest and most prized cacao bean in the world. Their signature 100% Trinitario and unique 70% Criollo strains are an achievement that elevates cacao to a whole new level. The name ‘Domori’ comes from ‘Due Mori’ in Venetian which refers to objects of dark color. Franzoni wanted a name to portray his expressive chocolate company. Venice is considered the land of trades of spices and ideas, and its ‘Due Mori’ representing two bronze statues in the famous Piazza San Marco. Also to Franzoni, the term ‘Due Mori’ is represents two dark beans: cacao and coffee.

Guayas, EcuadorGuayas is a coastal province in western Ecuador, home to the city of Guayaquil, which is both the nation’s largest city and the main port of the country. Thanks in no small part to Guayaquil— undeniably the center of the region’s economy & culture— Guayas is also the most populous province in Ecuador. The majority of its land is dedicated to agriculture, in turn dominated by sugarcane, rice, and various tropical fruits.
Cacao Estate
Hacienda VictoriaHacienda Victoria has been producing a sustainable and socially-responsible cacao harvest since 2012. The process starts in the nurseries, continues in the ground, and ends with the drying of the beans after careful fermentation. The 460-hectare farm was originally acquired in 2009, by farmer Carlos Eduardo García Fuentes, and blessed with the name of his wife, Victoria. These days, the couple’s thousands of arriba nacional cacao trees are intercropped with banana and plantain as shade trees, a natural & traditional approach to farming in this part of the world.
Cacao Strain
NacionalNacional is one of those ten evolutionarily unique types identified in 2008, using samples collected throughout the Americas over the previous century. Samples proven to be of the nacional cluster were taken from Ecuador and northern Peru, where it’s considered one of the traditional cacao cultivars; it was domesticated by indigenous Ecuadorians over 5000 years ago, reaching far beyond its small native growing region. Many years ago, however, the cultivar neared extinction as more productive clones replaced the region’s native trees. Nacional is known to be fruity & floral, with some astringency and almost no bitterness.

I ordered a few from different regions (exudador, peru, italy) and this was by far my favorite. Despite having no sugar it still have sweet undertones!
My first quality chocolate experience and it was really good! intense flavors with pleasant mild acidity and bitterness.
