Using the excellent ‘Heirloom Cacao Preservation’ accredited cocoa beans from Samuel von Rutte’s Hacienda Limon farm, they have created a classic 70% dark bar. Taste and to celebrate the fantastic work of the 12 Tree team, who are rehabilitating the 192 hectare plantation at Hacienda Limón, preserving this rare indigenous cacao variety from modern and more generic varieties. Maker

Fjåk Chocolate

Fjåk Chocolate, Norway’s first bean to bar chocolate maker! Fjåk focuses on ethically traded, organic cacao beans while using fresh ingredients inspired by their surrounding Nordic nature. Starting the chocolate journey in 2015, owners Agur and Siv spent two years experimenting and perfecting their chocolate. Fjåk was officially launched in 2017 and already won multiple awards by 2018. The name Fjåk comes from the Hardanger dialect, where people in the region would refer to each other as fjåk. It roughly translates to ‘loveable’ or ‘honest’ and well chocolate is the most loveable thing in the world!

Cacao Estate

Hacienda Limon

Hacienda Limon is located at the foot of the Andes Mountain Range, between endless plantations of cacao and banana. The climate on the farm is tropical & humid year round, with nutrient-rich volcanic soil thanks to the nearby Cotopaxi Volcano. Owner Samuel von Rütte, together with his wife Anita & four other families, run the 110-hectare plantation, which is dominated by strains of pure nacional arriba cacao varietals. In 2014, one of these varietals was awarded a heirloom cacao designation status, ensuring the protection of variety diversity. No insecticides or fungicides are used on the farm, and only very reduced herbicides (spot application) are ever utilized.
