Fruition Chocolate

Fruition Chocolate was created in 2011 by Bryan Graham located in Shokan, NY. Graham, was always interested in pastry as a young boy and has worked his way as a pastry chef. Over the years, Fruition is keen on exceptional attention to detail from the calibration of ingredients, packaging, and appearance of the bar (mold, snap, color) make them one of our top bean to bar craft chocolate makers in the world. Fruition has won many awards for their bars over the years, including ‘Best in Competition” Fruition was one of the first bean to bar makers to experiment with new concepts such as bourbon-barrel aging and creating bars with just two ingredients.

Cacao Region

Morogoro, Tanzania

Morogoro is a large state in central Tanzania, known for its hot & humid weather and its large game preserves. The main source of cocoa in the region comes from the Kilombero Valley, the base of a central fermentary called Kokoa Kamili, which was founded in 2012. Since its introduction ot the country in the late 19th century, cocoa in Tanzania has been almost exclusively grown by smallholder farmers, and before the entrance of Kokoa Kamili, these farmers had very little incentive to produce better cocoa.

Started in 2012 by friends Brian LoBue and Simran Bindra, Kokoa Kamili is one of the few African-origin cocoas which have been universally praised around the world. The team, which is based in Tanzania’s Kilombero Valley, has achieved a remarkably consistent post-harvest process, setting a standard in the region by buying wet beans at a premium and fermenting & drying them in a central location. This garners them an exceptionally fruity and rich cocoa, grown right in the nation’s Udzungwa Mountains National Park. Kokoa Kamili now works with nearly 3000 farmers in the region, all of whom get paid a premium immediately for their wet cacao, lessening their workload while also increasing their income.

The best white chocolate ever, a sophisticated take on vanilla boardwalk fudge

As a white chocolate skeptic (is it really chocolate?) I almost didn't try this bar. But I firmly believe that Fruition is one of the best US-based chocolatiers, so I thought I would give a try for something out-of-the-ordinary. This was definitely the right call - this bar for me is reminiscent of vanilla fudge from a beach boardwalk on the east coast, but without being so overly sweet. The texture is melt-in-your-mouth, and the subtle cocoa butter flavor with the warm and toasty vanilla makes this a divine sensory experience. It is on the sweeter side, however, so if that isn't your thing, you might not enjoy it as much. I found it hard to resist consuming the whole bar in one sitting!

Excellent white chocolate

My husband loves white chocolate but it can be hard to find good white chocolate. This is the second time I bought the vanilla bean toasted white chocolate for him. He loves it and even though I’m a dark chocolate person myself, I love it too. It’s smooth, nicely rich and delicious. We will continue to purchase it!

Interesting flavor but kind of one note

I am a big fan of white chocolate so I expected to love this one, however I only really taste the brown butter flavor and don't get much else. I even left it on my tongue for a while in hopes of picking up something else. I did love the milk chocolate brown butter bar by the same brand though, that one was a 5/5.
