Back in 2014, they became obsessed with Desmond Jadusingh's Bachelor's Hall cacao after tasting what David considered the best chocolate he'd ever had in his life. David decided to wait until he was "good enough" to work with this extremely delicate and nuanced cacao.

Tasting notes: Star fruit, mocha, spice

Five years later, David finally got his wish - they air-freighted in the cacao from Desmond in Jamaica and began carefully working with it. It's hard to overstate the incredible emotions that come along with this bar. Paying over four times the commodity price for the cacao, this chocolate is the realization of a dream.

LetterPress Chocolate was cofounded by David and Corey Menkes in Los Angeles, CA. They founded LetterPress with the purpose of paying cocoa farmers a a premium for quality, sourcing their cacao through direct trade, and working with partners such as Uncommon Cacao, Meridian Cacao. Quality above quantity with as few ingredients as possible to make the best chocolate possible is their mission. On the inside flap of every bar is their favorite quote from Benjamin Franklin: “The bitterness of poor quality remains long after the sweetness of low price is forgotten.”

The aptly-named Bachelor’s Hall Estate, owned and operated by Desmond Jadusingh, is located in southeastern Jamaica. Jadusingh took over the land that was once his grandfather's farm in 2002, quickly realizing that it was one of the most productive cocoa farms on the island. But after a few years of one natural disaster after another, he was strapped for cash and so did some research of his own, eventually leading to the overhaul of Jamaica’s fine flavor cocoa sector. These days, Bachelor’s Hall is one of the most famous cocoas in Jamaica, all with absolutely no use of fertilizer or chemicals of any kind.
