The first and only Satocao São Tomé bar made in North America - they had to air freight it in.
São Tomé and Príncipe  is located on the western equatorial coast of Africa.  The former Portuguese colony, the country has a terrible cast of slavery. Now one of the most stable democracies in Africa, São Tomé  has some of the most unique soil and climate conditions for cacao,  but remains extremely poor.
Satocao was established in 2015 as a certified organic co-op of over 400 farmers from seven communities.  They were able to secure a very small amount of the very best beans we sampled to create a unique blend for this limited edition!

LetterPress Chocolate was cofounded by David and Corey Menkes in Los Angeles, CA. They founded LetterPress with the purpose of paying cocoa farmers a a premium for quality, sourcing their cacao through direct trade, and working with partners such as Uncommon Cacao, Meridian Cacao. Quality above quantity with as few ingredients as possible to make the best chocolate possible is their mission. On the inside flap of every bar is their favorite quote from Benjamin Franklin: “The bitterness of poor quality remains long after the sweetness of low price is forgotten.”

Reminiscent of well processed Peruvian, Ecuadoran, or Venezuelan cacao (i.e. Porcelana, Criollo/Trinitario, or Nacional), this bar has a sublime array of light, clean, vaguely fruity flavors or tastes as it melts in your mouth. I find attempts to describe chocolate's rich palate in more specific analogies with fruits, baked or leather goods, etc. either deprecate its uniqueness or fail to apply that specifically across different people's tastebuds. Suffice it to say that this is not your concentrated or "fudgy" chocolate bar associated with many central African or Forastero-sourced beans, and all too easy to consume all too quickly.

Excellent texture with a long, lingering peanut butter like taste

This bar, like many from Letterpress, has a very pleasing texture. The flavor tastes like a peanut butter cup made from extremely good chocolate, and persists into a lingering aftertaste. A stand out among a large order of numerous bars.
