About Naive Cacao Pulp 70%

You might wonder what on earth is cacao pulp. The most creative product Naive has ever developed. A fresh cacao bean is surrounded by white mucilage called a placenta, also known as pulp. It is sweet, citrusy and no cacao plantation visit is complete without watching a ripe cacao pod being cut open with a machete and then sucking on this refreshing pulp. This amazing by-product is full of vitamins, antioxidants and flavor. Naive has found a way to collect and preserving cacao pulp - freeze-dry the pulp to develop a meringue-like texture and then immerse the pulp into chocolate made from white heirloom cacao. A cacao taste like never before!

Chocolate Naive

Chocolate Naive is a craft bean to bar chocolate maker in Lithuania. Not only do they source fine quality beans but they also work with local farmers and suppliers to source wild and organic ingredients that go in their chocolate bars. Naive uses modern chocolate making techniques to reveal the natural character of the cacao beans.

In the tiny town of Giedraičiai, in eastern Lithuania, Domantas Užpalis creates unique chocolates blending tradition with instinct and innovation. Naive is one of just a few bean-to-bar makers across Europe. In his small farmhouse workshop, Domantas takes carefully selected beans through the labor-intensive steps to make his exquisite bars, often combining ingredients foraged from the forests nearby, milk from the town's grass-fed cows and spices from afar to realize his singular vision.

Get a taste of cacao pulp!

I bought this purely out of curiosity because I wanted to taste what cacao pulp was like. So citrusy and delicious!! Personally, I don’t go for inclusion bars where large chunks of things are just placed in to the top of the bar, but in this case, that was perfect because I could rip off a piece of the pulp to taste it without the chocolate. Quite delicious! I hope to one day taste it in it’s raw form. I didn’t however enjoy the chocolate as much in this bar. Perhaps eating the pulp straight up right before that affected my palate negatively towards experiencing the chocolate at its best. Also - a note - when opening the package, it’s a bit disappointing because the chocolate bar itself isn’t rectangular and instead an amoebic shape - which is cool and all, but from a consumer perspective, you feel a bit cheated because of the smaller size when you’re used to getting a bar that’s generally the size of the packaging. Just a general food packaging pet-peeve of mine as a consumer. ;) Overall, I’d say this is worth it for the unique experience of tasting the cacao pulp. I applaud the makers efforts to find a way for people to experience this!
