To the west of Caracas, Venezuela, accessible only by boat, and after several kilometers of winding and uncertain road lies a mythical place: Chuao. This small village has been known for generations for the purity and quality of the cocoa that grows there. Bordered to the north by dense tropical forests, to the south by the Caribbean Sea, this isolation guarantees a pure criollo and some hybrids unique in the world. An exceptional terroir, an ancestral know-how, a traditional drying on the ground in front of the church square made this cocoa the most sought after in the world and the best. Tiny production makes it a rare product that we are proud to present. This chocolate is balanced in bitterness and acidity, woody, structured.

François PralusFrançois Pralus is a French chocolate maker has been making chocolate since 1991. He has one of the most diverse line of single origin bars. Each bar highlights the unique taste profile from each origin country, taking you on a flavor adventure from around the world. Pralus also owns a plantation in Madagascar, so they have direct control of the quality of the beans they choose and has mastered cultivating the reputable Criollo bean. As a Master Chocolate Maker, he is one of the few makers in France to manufacture his own chocolate. The name Pralus has been around for over half a century when his father Auguste Pralus made a prominent household name in the confection world. He opened a store in 1948 and has been recognized with many awards and merits. Since then Pralus has set the bar high for his sense of creativity and skilled chocolate making.

Cacao Strain
ChuaoChuao, is named for the isolated Venezuelan village in which it’s grown. Chuao is one of the cultivars of the the Criollo group. Chuao cacao is said to be a carefully-fermented representation of the best varietals from Venezuela, rich with berries and a sharp cocoa base, finishing heavy. Differentiating a cacao as “chuao” is not to necessarily name it a pure criollo, but to clarify that it comes from the coastal village of Chuao, an area isolated to the point that its cacao has developed its own unique blend of flavors.
This was my favorite bar for a long time, and undoubtably one of my favorite single origins. Like the other review said, it is unassuming at first but it's incredibly balanced and rich and velvety. This is one that will take up your attention.
Among the very best I’ve tried. In the same quality ballpark as Domori and Dick Taylor, which is saying a lot. Five stars is easy for this one.
One of the best chocolates I've ever had, I only wish I was good at the tasting notes skill. Deep chocolate flavor with many other layers as it melts slowly in your mouth. I detected some raisin or maybe fig, but lots of other notes as well. The bar is just a little soft, so no snap, but that's a minor detail. Aftertaste was long and delicious. I'll be back for more.
This is an exceptional Chauo bar. It tastes kind of unassuming at first, but then a wonderful fruity aroma builds up. The texture is smooth and typical of French chocolate makers. This 50g bar is a little pricey, but no doubt the quality is exceptional.
