About Soma Old School Milk Chuao Bar

A milk old school from the coveted Chuao cacao, chocolate as it was back in the day - simple and pure. Only three ingredients ground together in their vintage melangeur with no further processing, refining or conching. Partially ground Chuao cacao nibs, milk and whole crystals of organic cane sugar provide an entirely unique crumbly almost cookie-like texture.

Maker

Soma

Soma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.

Cacao region

Aragua

Aragua State is located squarely in northern Venezuela, along the central coast. The region encompasses a variety of climes, including beaches, plains, and jungles, the latter of which is home to one of the state’s many industries: cacao farming. The municipalities of Choroní, Ocumare, and Chuao are some of the most famous & historic cacao-growing areas of Venezuela, as well as the home of— arguably— its most beautiful beaches. In Ocumare the main industries are fishing and cacao production, while Chuao is famously close to the capital city of Caracas, but difficult to get to. The village is only accessible by travelling via boat from nearby Choroní, and then trekking a few miles inland.

Aragua

Cacao strain

Chuao

Chuao is a Venezuelan Criollo variant from the coastal Chuao region, with a reputation for aromatic complexity rooted in its specific terroir. As a heritage variety with protected designation status in Venezuela, it represents both genetic significance and the cultural importance of regional cacao identity. Chuao cacao is said to be a carefully-fermented representation of the best varietals from Venezuela, rich with berries and a sharp cocoa base, finishing heavy. Differentiating a cacao as “chuao” is not to necessarily name it a pure criollo, but to clarify that it comes from the coastal village of Chuao, an area isolated to the point that its cacao has developed its own unique blend of flavors.

Milk chocolate that hits like a Dark

Other participants in my chocolate tasting group thought this was Dark Chocolate. It made some question their dislike for "Milk" chocolate, including myself. It reminds me of a 60% dark chocolate bar. The cookie-like texture is interesting. It's very crumbly with a crunchy snap when you break it. But it still has some give with almost a bread-like structure inside. This was a group favorite.

ABSOLUTELY INCREDIBLE! One of my top favorites, by one of the best chocolate makers I have experienced. I dont believe you can go wrong with anything by SOMA. This is consumed almost as soon as it arrives lol ITS THAT GOOD

The texture of this bar makes it next level

I really loved this bar. Even though it is only two ingredients the texture makes it out of this world. I have had a love affair with Soma ever since I visited their shop in Toronto. Everything I've had from them has been amazing. This bar is so good in fact that I want to go and buy more ASAP. The crunchy sugar crystals are amazing. It has a cookie like texture and sometimes reminds me of the crunchier parts of a brownie. If you're thinking about getting this you should put it in your cart.

OMG!

This is one of the best bars i ever tried for chocolate. I thought it would taste more like the taza chocolate which i personally don't really like because it's gritty and not my type, But this was SOOOOO good, It's gritty but tastes so good the texture is different. It actually tastes amazing and is addicting. I would give it a try.

Best milk chocolate!

This is the tastiest milk chocolate I've had. Usually I prefer higher percentage cocoa, but the chuao lends a deep flavor that is superb. The rustic texture gives a twist that enhances the experience. I would happily eat and savor this delicious chocolate again and again and again. And I plan to.

Unique Milk Chocolate and Texureb

When you bite into it, it has a nice and grainy sugary texture. It’s a different experience compared to the smooth lush texture we are used to. The flavor really hits you, It tastes like condensed milk chocolate with grainy white sugars. Dairy flavor tastes more like condensed milk, instead of it being straight milky.

Different and wonderful!

You have to give this bar a try. The chocolate flavor is light, and not overbearing. It quickly melts in your mouth leaving behind crunchy bits of nib and sugar. The textural contrast is a delight.

Soma Old School Milk Chuao Bar

I can give 10 points for the texture (it is surely a winner). If I have to talk about aroma and flavor, I can just think about the DARK OLD SCHOOL SOMA with an expressive chocolate profile and, unfortunately, lack of cookie-like texture for reasons unknown to me. Old school MILK lacks the chocolatey-ness that I was craving. Strong dairy taste "topped" with icing sugar. However, I think it is a good option for white and, maybe, milk chocolate lovers.

Love this chocolate

Did not realize when I bought it that this would become my new favorite. I normally like a smooth texture chocolate this one has roughness to the chocolate and it is so good. It also is good as a sucking chocolate.

I am addicted to this Chocolate!

This is absolutely my favorite chocolate. It's unlike anything I've ever had and it's changed my relationship with Chocolate - I physically crave it and order it in bulk so I always have some on hand. It is unique in that it's grainy, not smooth; kinda like a hard cookie. And it's simple and raw in it's presentation (visually, texturally and in it's flavor). It's difficult to explain the experience but I highly recommend you give it a try for yourself.
