A milk old school from the coveted Chuao cacao, chocolate as it was back in the day - simple and pure. Only three ingredients ground together in their vintage melangeur with no further processing, refining or conching. Partially ground Chuao cacao nibs, milk and whole crystals of organic cane sugar provide an entirely unique crumbly almost cookie-like texture.

SOMA ChocolatemakerSoma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.
Cacao Region
Aragua, VenezuelaAragua State is located squarely in northern Venezuela, along the central coast. The region encompasses a variety of climes, including beaches, plains, and jungles, the latter of which is home to one of the state’s many industries: cacao farming. The municipalities of Choroní, Ocumare, and Chuao are some of the most famous & historic cacao-growing areas of Venezuela, as well as the home of— arguably— its most beautiful beaches. In Ocumare the main industries are fishing and cacao production, while Chuao is famously close to the capital city of Caracas, but difficult to get to. The village is only accessible by travelling via boat from nearby Choroní, and then trekking a few miles inland.
Cacao Strain
ChuaoChuao, is named for the isolated Venezuelan village in which it’s grown. Chuao is one of the cultivars of the the Criollo group. Chuao cacao is said to be a carefully-fermented representation of the best varietals from Venezuela, rich with berries and a sharp cocoa base, finishing heavy. Differentiating a cacao as “chuao” is not to necessarily name it a pure criollo, but to clarify that it comes from the coastal village of Chuao, an area isolated to the point that its cacao has developed its own unique blend of flavors.
Did not realize when I bought it that this would become my new favorite. I normally like a smooth texture chocolate this one has roughness to the chocolate and it is so good. It also is good as a sucking chocolate.
This is one of the best bars i ever tried for chocolate. I thought it would taste more like the taza chocolate which i personally don't really like because it's gritty and not my type, But this was SOOOOO good, It's gritty but tastes so good the texture is different. It actually tastes amazing and is addicting. I would give it a try.
This is the tastiest milk chocolate I've had. Usually I prefer higher percentage cocoa, but the chuao lends a deep flavor that is superb. The rustic texture gives a twist that enhances the experience. I would happily eat and savor this delicious chocolate again and again and again. And I plan to.

When you bite into it, it has a nice and grainy sugary texture. It’s a different experience compared to the smooth lush texture we are used to. The flavor really hits you, It tastes like condensed milk chocolate with grainy white sugars. Dairy flavor tastes more like condensed milk, instead of it being straight milky.
