Collection description: Amazonas is an Amazonian department of Peru, located in the north of the country. The vast and deep Marañón valley is partially located in Amazonas, and constitutes one of the most important physical features of the region. With a tropical landscape that includes steep river gorges and mountains, most of the department is still a part of the rainforest, an integral part of its main economic activity: agriculture. The most important crops in Amazonas are coffee, rice, cacao, and a variety of regional fruit trees.

Collection description: Founded in 2005, the Cooperativa Norandino represents more than 7,000 families producing cocoa, coffee and panela across the north of Peru. Its mission is to improve the livelihoods of its member families by offering access to local and international markets. The cooperative is large by Peruvian standard, but it’s driven by its core values of transparency, equality, respect, responsibility, democracy and quality. All of Norandino's producers are Organic- and Fairtrade-certified, but because it represents cacao producers from so many regions of the country, chocolate makers are able to source Norandino cacao based on area of cultivation or even type of cacao. This allows makers to invest in a sustainable and equitable system while still maintaining control over their unique flavor proposition.

Collection description: Piura is a department of northwestern Peru, bordered in the north by Ecuador and on the west by the Pacific Ocean. Several rivers run through the province from the region’s mountainous zones, serving to keep the coastal plantations naturally well-irrigated and productive year-round. The region is the second most-populous in the country, responsible for roughly a third of Peru’s annual petroleum production, as well as a significant amount of its mining. Similar to the rest of the country, much of Piura’s agriculture relies upon commercialized crops, such as sorghum, rice, corn, and yucca, though an increasing amount of native criollo cacao is being cultivated throughout the region.

Collection description: Qantu, based in Montreal, was started by Elfi and Maxime in 2016. This pair fell in love with bean to bar chocolate after researching cocoa after their first plantation visit in 2014. The immense passion and pride of the cocoa producers inspired them to create bean to bar chocolate. Qantu focuses on Peruvian cacao for the moment, which is where Maxime and Elfi met over a decade ago in Elfi’s home country.The name “ Qantu” (pronounced “Kantu”) derives from the name of the national flower of Peru and Bolivia. The word comes from the native language of the Peruvian Andes, Quechua, it represents a symbol of unity and hospitality.
