Definite ChocolateDefinite Chocolate is a micro batch bean to bar chocolate maker from Dominican Republic. By sourcing directly from local cacao producers, they use only high-quality single origin cacao, which they roast, winnow, grind, temper and mold into fine chocolate bars with the utmost care. As far as possible, Definite Chocolate uses only locally sourced ingredients to support the local industry and to give a touch of Caribbean feeling to every bar. All their bars are made naturally without any additives. Definite Chocolate was founded by Jens Kamin, who moved from Germany to the Dominican Republic to make his dream come true and become a chocolate maker. They are the first Dominican chocolate producer who won an international award, and that only one year after starting their business in 2017.
Cacao Region
Duarte, Dominican RepublicDuarte is a northern province of the Dominican Republic, named after Juan Pablo Duarte, the founder of the country. The province is located in the eastern portion of the Cibao Valley, and finds its economic base in both commercial industry & processing, and agriculture. Duarte grows over two-thirds of the Dominican Republic’s exported cacao, as well as ~60% of the rice consumed within the country; other crops include coffee, tobacco, and bananas.
Cacao Estate
Öko-CaribeÖko Caribe is one of several organic cacao cooperatives in the Dominican Republic, but has managed to distinguish itself thanks to consistent high quality beans and very close relationships with all of its 165 farmers. The co-founders maintain these relationships through regular technical training in agronomic practices and organic certification, as well as interactions on a personal level in the community. Their award-winning beans are centrally-fermented in wooden boxes, and depending on the bent of the maker, chocolate made with Öko Caribe cacao could be sweet, spiced, or even fruity. All Öko-Caribe cacao is certified organic.
AA.Nose of maple, tasted fruity at first like plum or raspberry, mellowed to banana and honey, then left a hazelnut aftertaste. Flavorful but subtle, not astringent or bitter. Texture was soft and fudgy. All around, a pleasing bar!
TT.This bar has some good notes but we also get notes of "stale" (the bar wasn't stale, but it's a flavor that's hard to describe) that we're not a fan of. There are so many bars we like better, but it's still very high quality and was fun to try.

JJenThis bar has a smooth mouth-feel… very creamy when melting – which is usually the case when there is cocoa butter added, but with only two ingredients (cacao & cane sugar), the processing & quality of this bar is superb! The fruit notes are delightful. Highly recommend! It’s right up there aside Dandelion chocolates in terms of quality and flavor notes.
