Maker

Friis Holm

Friis Holm is a multiple award winning chocolate maker in Denmark. A trained chef by profession, the founder Mikkel Friis-Holm has owned a restaurant, a bakery, and then became a distributor for Scharffen Berger chocolate in Scandinavia. This passion for chocolate evolved into a deeper interest, and lead to the formation of a chocolate company in 2008. Friis Holm has a very particular approach when crafting his bars. All of his chocolate bars are kept the same, from the origin, the bean type, roast and percentage, except for one key difference during the refining process; the number of times the cocoa beans are turned. Resulting in dramatically different tasting notes in the chocolate bars. Give Friis Holm a try and taste the experience for yourself!

Soft crunch, smooth and creamy

There’s a very soft crunch, kind of like the crunch from a crunch bar, but much softer and more subtle. The chocolate is very smooth, creamy, and milky. I recommend. One disappointment, when I opened the bar it was broken in half.

Addictive

My husband is usually the white chocolate lover, but this bar is special. The unexpected extra zing the Yuzu adds to the already smooth decadence of the white chocolate is unlike anything Ive ever tried. My only gripe is the steep price tag.

Interesting, but more medicinal than bright citrusy

This was an unusual bar - I love citrus and white chocolate, so I was curious to try it with yuzu! It's kind of odd, though - more of a medicinal orange rind flavor than lemon. The melt of the chocolate itself is quite smooth, but there are noticeable granules of rind. It's a bit pricey; it's actually on par with other craft chocolate on a per gram basis (this bar is 100g), but I wish they had smaller sizes. I would recommend Kaitxo's citrus bar (lemony, but mellow) or Palato's lemon and pink salt bar (intense lemon) over this, especially if you are looking for bright, classic lemon flavor. If you enjoy slightly more bitter, herbal flavors, you might really like this one.
