Fruition Chocolate

Fruition Chocolate was created in 2011 by Bryan Graham located in Shokan, NY. Graham, was always interested in pastry as a young boy and has worked his way as a pastry chef. Over the years, Fruition is keen on exceptional attention to detail from the calibration of ingredients, packaging, and appearance of the bar (mold, snap, color) make them one of our top bean to bar craft chocolate makers in the world. Fruition has won many awards for their bars over the years, including ‘Best in Competition” Fruition was one of the first bean to bar makers to experiment with new concepts such as bourbon-barrel aging and creating bars with just two ingredients.

Cacao Region

Junín, Peru

Junin is a department in central Peru, smack in between the Andes Mountains and the Amazon Rainforest. Bordered in the west by the Peruvian capital, Lima, Junin has a mix of industries and climates; its agricultural & mining sectors have become integral to Lima’s economy in recent decades. Heavy metal mining and processing have begun having serious effects upon the surrounding communities, however, so agriculture is seen as having a more promising future. In Junin’s mountain valleys, farmers tend to grow local crops such as potatoes and corn, while the more tropical regions are home to coffee, precious woods, and a variety of fruit production.

Cacao Estate

CAC Pangoa

CAC Pangoa is a cacao co-op in the Junín region of Peru, with more than 700 contributing members. Pangoa originally focused on coffee beans, but in the decades since their founding in 1977, they’ve also become dedicated to preserving their land through the cultivation of cacao. With the help of the organization Conservation Cacao, CAC Pangoa is planting more & more fine flavor varietals of cacao to sustainably and safely replace their ageing coffee. These days, the cooperative only produces organic-certified Fair Trade cacao, and they’re starting to turn to it more & more as their coffee trees feel the devastating effects of climate change.

Fantastic

This is one of my favorite bars. Incredibly smooth. Beautifully balance between dark and milk. Light salty flavor. I highly recommend it.

Well-balanced and mildly salty dark milk bar from Fruition

I love a bit of savory mixed with sweet, and I love Fruition's bars, so I figured this would be a slam dunk. This bar did not disappoint - Fruition expertly combines a dark milk chocolate experience, their signature melt-in-your-mouth texture, and just a tinge of sea salt. The amount of saltiness is perfect for me - it does not not overpower the chocolate but merely complements it.

Smooth, bright & slightly salty

Salt & chocolate are a winning combination. This bar melds the two perfectly in a smooth, creamy, flavorful bar. The chocolate notes are bright and slightly fruity and the salt is delicate and does not overwhelm the palette. I usually am a dark chocolate only consumer, but I had a hard time stopping myself from eating too much of this bar at once!
