Collection title: Boyaca, Colombia
Collection description: Boyacá is centrally located within Colombia, almost entirely within the Andes Mountains of the Eastern Cordillera Range, at the border with Venezuela. The state is widely known as "The Land of Freedom," because this region was the scene of a series of battles which led to Colombia's independence from Spain. The emerald mines and remaining colonial towns are now a popular tourist attraction, but outside of the few cities, most of the region depends upon agriculture to make a living.

Collection title: Goodnow Farms
Collection description: Goodnow Farms chocolate is handcrafted in Massachusetts. All the cacao they use is ethically sourced from small farmers and producers that Tom and Monica have met during their travels throughout Mexico, Central and South America. The cacao is carefully stone ground, and conched in small batches. They also press their own cocoa butter for each bar. They admired the concept of single origin bars and capturing the different taste profiles, and uniqueness through each bar. They discovered their love for real craft chocolate after visiting a vintage shop in Los Angeles. Tom and Monica officially created Goodnow Farms in 2016 but have been crafting their creations since 2008. The pair works hard to engage with the communities where they receive their cacao from to ensure farmers are fairly compensated and practice sustainable farming.

Collection title: Impulsa Bacao
Collection description: This project was established to help bring cacao-producing families out of poverty and generate a positive social & environmental impact in the region of Boyaca, Colombia. To help these farming families generate profits from their cacao, Impulsa Bacao built a new fermentation and drying facility in the town of San Pablo de Borbur. They also provided technical assistance to help farmers identify fine flavor cacao varietals, and taught them best practices for caring for such varietals. During harvest season, every day they send a truck to dozens of farms to pick up the freshly-harvested wet cacao beans, and bring them to the facility for proper processing. Despite how young the project is, farmers are excited about the possibilities it shows for growing fine flavor cacao into an important cash crop in the region.
