This is a classic European chocolate bar made from Trinitario cacao and added cocoa butter.

Trinidad is the birthplace for this hybrid bean; one can almost say it is the original blended chocolate. This bar has a full deep aroma of spice and herbs, with strong floral flavors on the palette. Dark, smooth, and layers of flavors make this expansive bar very addictive.

It starts out with a slight fruit acidity, and as you chew it is earthy, floral and savory, all at once. Talk to different chocolate experts, and the flavors picked out in reviews vary wildly, from grass, asparagus, celery root to peach, truffle, lavender and coffee! What do you taste?

François Pralus is a French chocolate maker has been making chocolate since 1991. He has one of the most diverse line of single origin bars. Each bar highlights the unique taste profile from each origin country, taking you on a flavor adventure from around the world. Pralus also owns a plantation in Madagascar, so they have direct control of the quality of the beans they choose and has mastered cultivating the reputable Criollo bean. As a Master Chocolate Maker, he is one of the few makers in France to manufacture his own chocolate. The name Pralus has been around for over half a century when his father Auguste Pralus made a prominent household name in the confection world. He opened a store in 1948 and has been recognized with many awards and merits. Since then Pralus has set the bar high for his sense of creativity and skilled chocolate making.

Great Bar, with the right audience

What an interesting bar. My wife and I picked up lots of herbs, tobacco, earthy, umami flavor, etc. Not at all what we were expecting when digging in to a bar of chocolate. People often talk about the fruity chocolate of Madagascar as a perfect transition for people new to single origin chocolate - very appetizing and easy to love. This is the other extreme. I've had some friends who love peaty whiskey and cigars who loved this bar. But for most people who are newer to single origin chocolate, this is a shock to the system, and some may simply never enjoy this flavor profile. It grew on me a bit over time. My wife could never get herself to really enjoy it. So if you're looking to be amazed by the diverse flavors of cacao, go for it. But this is not where I would begin your chocolate journey.

I got this chocolate as part of broken chocolate box! I really enjoyed it! It has hints of cocoa butter and beautiful spicy notes.

I feel that this bar is what Dark Academia tastes like. The notes of spice and tobacco bloom when it melts in your mouth. An absolute joy to have!
