They are delighted to be working with these fine cacao beans from the Hacienda Victoria, a progressive farm known for its stewardship of the land and its delicate fermentation, showcasing the mellow nuttiness of the Arriba Nacional beans.

Ingredients -cocoa nibs, cocoa butter, sugar, wheat flour, sugar, salt, yeast, water, milk, butter, malt (wheat), egg yolk. Minimum cocoa solids 62%.

Pump Street Chocolate is an award winning British chocolate maker in Suffolk, UK. All of their chocolate bars are handcrafted from direct trade beans and natural ingredients. Their bars have won many accolades from the International Chocolate Awards, the Academy of Chocolate and Great Taste. Originally started as a bakery, producing high quality breads and pastries Pump Street decided to take a turn and tackle bean to bar chocolate.

Guayas, Ecuador

Guayas is a coastal province in western Ecuador, home to the city of Guayaquil, which is both the nation’s largest city and the main port of the country. Thanks in no small part to Guayaquil— undeniably the center of the region’s economy & culture— Guayas is also the most populous province in Ecuador. The majority of its land is dedicated to agriculture, in turn dominated by sugarcane, rice, and various tropical fruits.

Hacienda Victoria

Hacienda Victoria has been producing a sustainable and socially-responsible cacao harvest since 2012. The process starts in the nurseries, continues in the ground, and ends with the drying of the beans after careful fermentation. The 460-hectare farm was originally acquired in 2009, by farmer Carlos Eduardo García Fuentes, and blessed with the name of his wife, Victoria. These days, the couple’s thousands of arriba nacional cacao trees are intercropped with banana and plantain as shade trees, a natural & traditional approach to farming in this part of the world.
