Inspired by the mountains and local flavors surrounding us, we have added ground pine nuts to our dark chocolate blend to create a soft, smooth and deliciously nutty bar. Pine nuts are the seeds of Pinyon Pine trees which are native to Utah and grow in the pinyon-juniper woodlands in the picturesque rocky slopes and mesas of the Great Basin. Pine nuts are a true taste of our high, west locale.

Ritual Chocolate

Ritual Chocolate, based in Utah, owned by Robbie Stout and Anna Davies are masters at balancing sugar and cacao. This sophisticated chocolate maker only uses those two ingredients to make their chocolate, with no added soy, butter or vanilla. We appreciate Ritual for their purposeful variations in cacao percentage from harvest to harvest to produce the best tasting chocolate. Ritual is crafted on European methods with an American style. Their journey began back in 2008 in Boulder, Colorado, both cyclists, they noticed that both coffee and cycling companies focused on cyclists. They wondered why and sampled over 20 different cups of coffee with an expert. Robbie was surprised to learn how every cup tastes different due to the roast and where it was grown. From there they learned about terroir and thought well, everyone is doing coffee; why not chocolate! They already ate a little pieces of chocolate every night after dinner, it was their ‘ritual’. Robbie and Anna spent the following years in Costa Rica after taking ownership of an old chocolate factory. They meticulously studied the craft of chocolate, reading every manual on machinery and everything in between. Their attention to detail and dedication has really demonstrated through their award winning chocolate bars.

Unique Pinon scented bar

I have fond childhood memories of pinon wood burning in a fireplace in the American southwest, and so this bar brings me squarely back to those days. I love the unique ingredient, which I've not seen used elsewhere in any chocolate. The creativity in this bar is exceptional. That being said, the pine nuts seem to be pulverized so thoroughly that they form part of the base of the bar, rather than being sort of nutty bits or inclusions added into or on top of the chocolate, which I think I would have preferred. Like the other Ritual flavored bars, this one is unique and interesting, but I would have wished they had pushed the flavor further. The pinon is relatively subtle, but wonderful nonetheless.

I have already tried many hazelnut/peanut inclusion dark chocolate bars but this is the first time a craft maker exhibits the same concept with "unusual" edible seeds. Ritual Chocolate has added ground pine nuts to their mountain blend inspired by the local mountains and flavors to create a soft, smooth, and deliciously nutty bar. Aesthetically appealing and readable packaging, eye-catching, and wild-type aroma able to offer a touch of nature with "classic" ingredients. Startling snap, soft-creamy texture, warm mouth feel. A concise and to the point sweet pine nuts chocolate taste followed by a surprisingly bitter piney-like long-lasting finish/aftertaste. Pure, innovative, simple, and quite distinct which had driven me to experiment with paring elements as pink salt, crunchy toasted nuts, and Disaronno Amaretto that strive for greater complexity and possible evolution of flavors on the nose and the palate.
