SOMA ChocolatemakerSoma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.
The packaging for this bar is adorable and the bar mold design is so pretty too. I got a smoky aroma at first whiff and from there fell in love - the texture is glossy and the bar is delightfully more-ish. The flavor is brilliantly complex yet playful. I get notes of black tea, balsamic, lemon, walnut and fresh cream throughout, so much cream! Its so absolutely delectable, I can hardly ration myself.
I love this bar from the inside to the outside. First, the inside. The chocolate is blended, and while I enjoy single-origin bars, blending doesn’t have to mean using mediocre beans as a filler. The bar is blended like a world-class symphony. Of the tasting notes, I picked up on cream, black tea, and nuts. It’s flavorful, but not overbearing. Now, the outside. I amuse myself with paper, so I cut out the ninja kitties and use them because, well...ninja kitties!

Shockingly sweet well rounded bar for an 88% blend. Highly recommend.
I typically don’t like chocolate bars above 80-85%. I readily admit that I was a sucker for the most adorable and funny packaging I’ve ever seen on a chocolate bar! …and with SOMA as the maker, I felt safe taking a chance on this one. I taste some woody notes and a bit of bitterness, but not overwhelmingly so. The chocolate melts so easily on the palate and is a delight both to look at and consume.
