Cacaoteca is a tree to bar chocolate maker from Miches, Dominican Republic. Back in 2015, owner Coral was surprised by the exceptional taste of Dominican cacao. She realized that Dominican cacao is considered some of the best in the world, there weren’t any chocolate makers in the Dominican Republic taking advantage of its amazing crop! Using locally sourced cacao beans that are only a short few hours away from Cacaoteca’s location, it has a positive impact on the Dominican economy, since cacao is mostly exported. Cacaoteca works directly with its farmers, and train the farmers how to dry the beans ensuring top quality. Cacaoteca also provides fair pay for the high quality cacao and showcase the flavors of Dominican cacao.

Duarte, Dominican Republic

Duarte is a northern province of the Dominican Republic, named after Juan Pablo Duarte, the founder of the country. The province is located in the eastern portion of the Cibao Valley, and finds its economic base in both commercial industry & processing, and agriculture. Duarte grows over two-thirds of the Dominican Republic’s exported cacao, as well as ~60% of the rice consumed within the country; other crops include coffee, tobacco, and bananas.

APROCACI

APROCACI, or the Asociación de Productores de Cacao del Cibao, is an association of cacao producers in the northern Dominican Republic. The association was founded in 1997, and now works with hundreds of cacao farmers in the provinces of Salcedo and Duarte. Each farmer is in charge of processing and transporting their own cacao, with a small post-harvest processing facility made available by the association to farmers not-yet equipped to do it on their own land. Most of APROCACI’s farmers use organic farming methods, with 900+ tons of organic-certified cacao produced by the association each year.

A wonderful bar with intense cocoa flavor. Made in the country of origin of the bean, this bar creates another layer of social justice. Creating high values not only in taste but also how the product is made should become an important consideration of what we buy and what we eat. A small batch chocolate bar directly from the source.

Not quite as sharp, so so smooth. Really surprising
