Sixty years after his parents moved south for a better life, Ernesto Pantua, Jr. is still running his family’s cocoa farm in the Mindanao region of the Philippines. Now known as Kablon Farm Foods Corporation (KFFC), the estate is home to a multitude of fruit trees of all types, including heritage criollo and trinitario cacao trees. But the fully organic farm didn’t switch over to their current sustainable farming approach until the 1980’s, when a steep price drop for industrial fruits forced them to add value in a new way. In the on-site workshop, Ernesto’s team turns the varied produce from the farm into jams, juices, and coconut- & cacao-based products, as well as selling some of the fruit directly to the public. Ever since its first export in 2015, however, Kablon has become a remarkable source of fine flavor cacao from the Philippines, now available in chocolates made around the world.
