"Nestled in the Caribbean coast of Venezuela is the little village of Cuyagua. The cocoa from Cuyagua has been famous since the age of the Portuguese pirates who traded these same beans. I have the immense honor to make chocolate with Cuyagua's rarified beans. What I treasure most, however, is the heart of one of Cuyagua's cocoa farmers who has the heart of a poet. 

After I handed this farmer a chocolate bar made with the cocoa he helped grow and harvest, he said "This chocolate is like a river." When I asked him why, he said "this chocolate takes you on a journey of flavor and it goes to all these wild and wondrous places. It goes on and on like a river." It is my hope that you enjoy Cuyagua's river of flavor like Cuyagua's humble cocoa farmer did."

Amano Artisan Chocolate

Amano is a small batch chocolate producer located in Orem, Utah. The founder Art Pollard seeks out unusual cacao beans, buying them directly from farms, and sometimes even working with the farmers to improve fermentation and drying. First hand control over the process ensures the best quality cacao to make the best chocolate possible. Amano has won many awards including International Chocolate Awards, Good Food Awards, London Academy of Chocolate, and more. When Pollard decided he wanted to tackle the world of chocolate making, many people didn’t think it was possible. Amano has proven their dedication, by creating their own machines from scratch, and learning everything there is to learn about chocolate.

Precious bar but the distinctive clove taste is not for everyone. Best for pairing session to deeply evaluate all the qualities of this criollo variety.

Hard snap and smooth texture. Warm mouthfeel. Singular spicy taste: tons of clove and slightly cinnamon flavor. Clove is a pungent warm spice with a bitter astringent finish. The soft cantaloupe ice cream-like undertones help to balance the tasting profile but, for sure,
it is not something anyone can appreciate. I am certainly impressed by its complexity but it does not match my preferences.
