This rich milk chocolate base, contains little bursts of candied orange peel throughout. The peel comes from our friends at Natoora in London, who squeeze an incredible amount of oranges to supply fresh juice to ‘most’ of London. We process the peel into small pieces, before pairing them with the browned butter milk chocolate. The chocolate is made using cocoa beans from Oko Caribe in the Dominican Republic. For more than 50 years Adriano de Jesus Rodriguez and Gualberto Acebey Torrejon have generously shared their expertise to build a community of dedicated cacao farmers in the Duarte province, Dominican Republic. The care taken to nurture the quality of their cacao shines through in the stunning mellow tones that work beautifully left to stand alone and when combined with other ingredients. A lovely bean from lovely people.

Chocolarder is a small batch chocolate maker in Cornwall, UK. The founder Mike Longman, a former pastry chef has made award winning single origin bars since 2012. Chocolarder believes in the ‘ethical transparency’, which starts right at bean to bar. Longman ensures to build meaningful relationships with the farmers with the direct trade model to make sure farmers are being recognized for their hard work. Chocolarder picks only the finest beans to be produced into the chocolate bars. Chocolarder also believes that less is more with ingredients providing a top quality organic experience with health benefits as well.

Duarte, Dominican Republic

Duarte is a northern province of the Dominican Republic, named after Juan Pablo Duarte, the founder of the country. The province is located in the eastern portion of the Cibao Valley, and finds its economic base in both commercial industry & processing, and agriculture. Duarte grows over two-thirds of the Dominican Republic’s exported cacao, as well as ~60% of the rice consumed within the country; other crops include coffee, tobacco, and bananas.

Öko-Caribe

Öko Caribe is one of several organic cacao cooperatives in the Dominican Republic, but has managed to distinguish itself thanks to consistent high quality beans and very close relationships with all of its 165 farmers. The co-founders maintain these relationships through regular technical training in agronomic practices and organic certification, as well as interactions on a personal level in the community. Their award-winning beans are centrally-fermented in wooden boxes, and depending on the bent of the maker, chocolate made with Öko Caribe cacao could be sweet, spiced, or even fruity. All Öko-Caribe cacao is certified organic.
