ChocolarderChocolarder is a small batch chocolate maker in Cornwall, UK. The founder Mike Longman, a former pastry chef has made award winning single origin bars since 2012. Chocolarder believes in the ‘ethical transparency’, which starts right at bean to bar. Longman ensures to build meaningful relationships with the farmers with the direct trade model to make sure farmers are being recognized for their hard work. Chocolarder picks only the finest beans to be produced into the chocolate bars. Duarte, Dominican RepublicDuarte is a northern province of the Dominican Republic, named after Juan Pablo Duarte, the founder of the country. The province is located in the eastern portion of the Cibao Valley, and finds its economic base in both commercial industry & processing, and agriculture. Duarte grows over two-thirds of the Dominican Republic’s exported cacao, as well as ~60% of the rice consumed within the country; other crops include coffee, tobacco, and bananas.
Cacao Estate
Öko-CaribeÖko Caribe is one of several organic cacao cooperatives in the Dominican Republic, but has managed to distinguish itself thanks to consistent high quality beans and very close relationships with all of its 165 farmers. The co-founders maintain these relationships through regular technical training in agronomic practices and organic certification, as well as interactions on a personal level in the community. Their award-winning beans are centrally-fermented in wooden boxes, and depending on the bent of the maker, chocolate made with Öko Caribe cacao could be sweet, spiced, or even fruity. All Öko-Caribe cacao is certified organic.
This bar was interesting. The texture snd mouthfeel were absolutely 5/5. The chocolate itself had an interesting musty flavor that we likened a little bit to cheese rind. Not bad, but interesting. Would try something else from them.
This chocolate absolutely blew us away. We've had some other brown butter bars before which had that kind of nutty flavor you'd expect from a brown butter, with a very smooth (buttery) mouthfeel. They've always been pretty good. But this bar was totally different. It has beautiful sweet vanilla flavor with this richness that makes me think of a delicious vanilla bean ice cream. There's also a caramel-like flavor from the brown butter. Add those to the chocolate base, and it's like an amazing ice cream sundae in every bite. Absolutely addicting, and great for any newcomers to craft chocolate - very approachable flavor.
