Fruition Chocolate was created in 2011 by Bryan Graham located in Shokan, NY. Graham, was always interested in pastry as a young boy and has worked his way as a pastry chef. Over the years, Fruition is keen on exceptional attention to detail from the calibration of ingredients, packaging, and appearance of the bar (mold, snap, color) make them one of our top bean to bar craft chocolate makers in the world. Fruition has won many awards for their bars over the years, including ‘Best in Competition” Fruition was one of the first bean to bar makers to experiment with new concepts such as bourbon-barrel aging and creating bars with just two ingredients.

Cacao Region

Duarte, Dominican Republic

Duarte is a northern province of the Dominican Republic, named after Juan Pablo Duarte, the founder of the country. The province is located in the eastern portion of the Cibao Valley, and finds its economic base in both commercial industry & processing, and agriculture. Duarte grows over two-thirds of the Dominican Republic’s exported cacao, as well as ~60% of the rice consumed within the country; other crops include coffee, tobacco, and bananas.

Öko-Caribe

Öko Caribe is one of several organic cacao cooperatives in the Dominican Republic, but has managed to distinguish itself thanks to consistent high quality beans and very close relationships with all of its 165 farmers. The co-founders maintain these relationships through regular technical training in agronomic practices and organic certification, as well as interactions on a personal level in the community. Their award-winning beans are centrally-fermented in wooden boxes, and depending on the bent of the maker, chocolate made with Öko Caribe cacao could be sweet, spiced, or even fruity. All Öko-Caribe cacao is certified organic.

Cacao Strain

Nacional

Nacional is one of those ten evolutionarily unique types identified in 2008, using samples collected throughout the Americas over the previous century. Samples proven to be of the nacional cluster were taken from Ecuador and northern Peru, where it’s considered one of the traditional cacao cultivars; it was domesticated by indigenous Ecuadorians over 5000 years ago, reaching far beyond its small native growing region. Many years ago, however, the cultivar neared extinction as more productive clones replaced the region’s native trees. Nacional is known to be fruity & floral, with some astringency and almost no bitterness.

Fruition Hudson Valley Bourbon Dark Milk 61%

Flavor profile: the initial impression is almond Irish cream liquor, then something unique and unexpectedly beautiful comes along... a sherry-like complexity such as biscuit, almond, and caramel viscous and amazingly sweet flavors. The gourmand mouthfeel is also filled with a remarkable sticky treacle delicatessen, vanilla, oak wood, and chocolatey gluttonous notes "walking" hand-in-hand with a juicy accent of cherry-flavored water in the background. In the finish, the palate is extremely light with authentic oak wood and a foretaste of ginger spice for just enough to sting the edge of the tongue. The taste of this bar is a real contradiction for how easy it is to swallow and its overall stimulation. The back taste is particularly rich and a lot extended. The long aftertaste is harmonic and gives sensations of warmth and nobility. It is surely designed for sophisticated consumers with a sweet tooth. Fruition conceived a way of working with the aromaticity of Bourbon Whiskey and flavorsome cocoa beans to bring you an appetizing and balanced "treat". All you have to do is enjoy it!

Mouthwatering texture with subtle bourbon flavor

Transports me back to a bourbon tasting room in the Hudson Valley. If you love chocolate, and you love bourbon, and you love chocolate bars with a melt-in-your-mouth, cocoa-butter forward creamy texture, this is the bar for you. The best boubon-inspired bar I've tried, and perhaps one of the best chocolate bars ever from a US-based maker.

Unusually complex for milk chocolate

The bourbon is pretty subtle and marries beautifully with the creamy richness of the milk chocolate, making for a far more complex taste than most milk chocolates.
