This award-winning origin comes from the jungles of Peru. The Ucayali river is one of the major headwaters of the Amazon, and the farmers living along its shores grow several varieties of fine flavor cacao. They bring the cacao on boats to their partners at Ucayali River Cacao, where the beans are expertly fermented and dried at their new facility. This extremely well balanced bar is floral and herbal, with notes of lemon verbena and fig.

Goodnow Farms

Goodnow Farms chocolate is handcrafted in Massachusetts. All the cacao they use is ethically sourced from small farmers and producers that Tom and Monica have met during their travels throughout Mexico, Central and South America. The cacao is carefully stone ground, and conched in small batches. They also press their own cocoa butter for each bar. They admired the concept of single origin bars and capturing the different taste profiles, and uniqueness through each bar. They discovered their love for real craft chocolate after visiting a vintage shop in Los Angeles. Tom and Monica officially created Goodnow Farms in 2016 but have been crafting their creations since 2008. The pair works hard to engage with the communities where they receive their cacao from to ensure farmers are fairly compensated and practice sustainable farming.

Ucayali

Ucayali in Peru's Amazon basin produces organic, uncertified cacao from 400 smallholder farmers at altitudes between 100 and 1,000 meters. The region grows Trinitario clones and local 'comun' varieties in polyculture with bananas and shade trees. Ucayali River Cacao handles on-farm fermentation and drying, buying wet cacao at premium prices to support farmer livelihoods.

This central fermentary works with cacao farmers along the Ucayali River, which is outside of the city of Pucallpa, in eastern Peru. Since their inception, Ucayali River Cacao has partnered with both USAID and Alianza Peru to offer local farmers access to an alternate market in a region plagued for too long by narcotraffickers. Buying wet cacao at a premium price takes a lot of work off the farmers’ plates without taking away income, and allows the processing team to ensure even fermentation & drying of all beans. Working with a few hundred smallholder farmers, the team at Ucayali River has been able to achieve a deeply flavorful cacao, with hugely varying flavor profiles depending upon the work of the chocolate maker.

Even if price is no object, this bar simply doesn’t earn its keep.

The chocolate is smooth with clear raisin notes, but the math doesn't add up. At $19 for 55g, you are paying a massive premium for a small footprint. In comparison, the Belvie Tien Giang offers a superior "raisin" experience for $11.50 at 80g.
When you break it down, choosing the Belvie is like getting a bonus bar for free—50g more chocolate for significantly less money. Luxury should be about superior quality, not just a higher price tag. Save your shelf space for the Belvie; it’s the better bar at a much fairer weight.

Complex, Fascinating

Not my normal go-to flavor profile, but an excellent bar that grew on me more every time I incorporated it into a testing. It has some a complex mix of herbal, grassy, fruity, and sweet. At first I was a bit unsure what to make of it, and then I really embraced these flavors and appreciated the incredibly diversity of flavor, all within a single bar. Beautifully made and a great example of why chocolate is so cool.
