Maker
Honeymoon ChocolatesHoneymoon Chocolates is a bean to bar craft chocolate maker that sweetens all their bars with raw honey. Self taught co founders Cam and Haley started making chocolate without refined sugar in 2016. They aim to both make a healthier lower glycemic chocolate, but also support honeybee research. Their packaging uses compostable and sustainable paper stock and sugar cane labels.
I expected more honey. I liked the raspberry flavor, but I'm not sure that the taste vs. amount of seeds skewed in their favor.
I find the raspberry is more amplified in the nose versus the taste of this bar, but overall, a tasty treat.
This bar has an interesting flavor. It has dried raspberry pieces on it, which include some seeds. Some may find this off-putting, but overall I think it was a great raspberry-chocolate treat.
The scents of this bar are like decadent chocolate raspberry cheesecake! The snap is clean and light. In this case, the texture is firmer. I love the raspberry zest mixed with the robust flavor of the honey they used. Mild, herbal honey-like astringency at the bottom of your throat and sweet watering mouth, raspberry zest tip of your tongue. The spicy film aftertaste is very short: just a few seconds before all the flavor disappears. These creations are one of a kind and if you are going to taste Honeymoon Chocolate, you need to be mentally open to a different tasting experience. Honey is a particular ingredient that works differently on the cacao origin we well know. Now what I see with Honeymoon is about a "developing approach". Why? They can always get out from their single-origin new flavors by using different excellent varieties of honey. Their bars are going to have an endless flavor profile.
