Chocolate Naive is a craft bean to bar chocolate maker in Lithuania. Not only do they source fine quality beans but they also work with local farmers and suppliers to source wild and organic ingredients that go in their chocolate bars. Naive uses modern chocolate making techniques to reveal the natural character of the cacao beans. In the tiny town of Giedraičiai, in eastern Lithuania, Domantas Užpalis creates unique chocolates blending tradition with instinct and innovation. Naive is one of just a few bean-to-bar makers across Europe. In his small farmhouse workshop, Domantas takes carefully selected beans through the labor-intensive steps to make his exquisite bars, often combining ingredients foraged from the forests nearby, milk from the town's grass-fed cows and spices from afar to realize his singular vision.

This bar has a sharp snap and a pleasant chocolate minerality aroma. After the first bite, it gives an instant refreshing artic mouth feel that prolongs it towards mineral and lightly savory flavor. Think about magnesium supreme! The sophisticated chocolate aftertaste, dry mouth, and tingling tongue. Tree stars because I do not appreciate this kind of flavors but I know many people who actually love it. It is a personal thing.

I like that the makers preserved as much of the nutrients of the chocolate as they could, but it's quite bitter and the sweetness, which does not come from sugar (I like that too) tastes separate from the chocolate itself. The bitterness really follows the taste around which is offputting. I'd say it's worth a try if it wasn't so expensive.

Unpleasant medicinal taste. Not sure what to make of it.

This chocolate has a very unique and somewhat unpleasant taste. It tastes more like medicine than food. I think it was a mistake to sweeten this chocolate with erythritol; I would have used lavender honey instead to take away some of the sharp bite. I am not sure how much of a bioactive effect this Molecules chocolate has on my body. I'll keep trying it (despite it tasting pretty gross) to see what happens. If they come out with a Molecules 2.0 bar that tastes more pleasant, I might try it again.

For Keto Fans, not for me though...

Now that I'm no longer on the keto diet, I find that I'm a purist about the source of my sweetness - I want real sugar. I did not like the erythritol flavor underlying the chocolate. I found it false and disturbing. I wish I read the label! Especially at a $15 price tag!
