The star of our bars is O'Payo, organic single region cacao from a certified co-op near the Bosawas Natural Reserve in the northern mountains of Nicaragua. This terroir translates to a broad array of flavors, especially when combined with milk.

Ingredients: Organic cocoa beans from Nicaragua, organic cane sugar, cocoa butter, Icelandic milk powder, sunflower lecithin.

Omnom Chocolate

Iceland’s only bean to bar chocolate maker, OmNom was started by former chef Kjartan Gislason and Óskar Þórðarson . Inspired by the bean to bar movement in the US, Kjartan started experimenting with making chocolate in 2014. At first it was just an experimental concept, until they began receiving positive feedback from the very beginning. OmNom has a small location in Reykjavík, Iceland, and every step of their chocolate making is handcrafted. All OmNom chocolate is crafted from organic cacao beans and Icelandic milk. Each of their ingredients are sourced sustainable locations and are certified organic.The fun brand name was inspired by the sound Cookie Monster makes when munching down on cookies.

Cacao Region

Waslala, Nicaragua

Waslala is a town and municipality in the North Caribbean Coast Autonomous Region of Nicaragua. The country’s national revolution during the 1970’s and 80’s affected Waslala tremendously, as it was the location of many guerrilla fights. But these days Waslala and the surrounding areas are more peaceful, covered with vegetation, rivers and streams, and scenic views of the countryside. The fine flavor cacao from this region currently comes from the Ingemann group. It’s produced by a cooperative of about 150 farmers located in the nearby rainforest, which is the largest in Central America, second only to the Amazon Rainforest.

My go-to dark milk

I have chocolate from around the world and dark milk is my favorite followed by flavored white chocolates. There is a sense of fudge that I prize but can’t describe. The flavor profile just seems right for me.

The dark chocolate and milk chocolate are delicious

Good, but not AMAZING

Was slightly disappointed - expected something incredible, great chocolate just not my favorite.
