Maker
QantuQantu is a chocolate maker based in Montreal. Qantu was started by Elfi and Maxime in 2016. This pair fell in love with bean to bar chocolate after researching cocoa after their first plantation visit in 2014. The immense passion and pride of the cocoa producers inspired them to create bean to bar chocolate. Qantu focuses on Peruvian cacao for the moment, which is where Maxime and Elfi met over a decade ago in Elfi’s home country. The name “ Qantu” (pronounced “Kantu”) derives from the name of the national flower of Peru and Bolivia. The word comes from the native language of the Peruvian Andes, Quechua, it represents a symbol of unity and hospitality.
Cacao Estate
Norandino CooperativeFounded in 2005, the Cooperativa Norandino represents more than 7,000 families producing cocoa, coffee and panela across the north of Peru. Its mission is to improve the livelihoods of its member families by offering access to local and international markets. The cooperative is large by Peruvian standard, but it’s driven by its core values of transparency, equality, respect, responsibility, democracy and quality. All of Norandino's producers are Organic- and Fairtrade-certified, but because it represents cacao producers from so many regions of the country, chocolate makers are able to source Norandino cacao based on area of cultivation or even type of cacao. This allows makers to invest in a sustainable and equitable system while still maintaining control over their unique flavor proposition.
This is a one of a kind bar. If you want a unique taste explosion this is your bar.. It's beautiful to look at with exposed spices on the back... you can put that side on your tongue for a more intense taste or the other way around for a more subtle taste that lets the spices hit your tongue slowly as the chocolate melts... The sweetness profile is enhanced by the spices so if your a 60 to 65% person you will likely love this 70% bar as will the 70 to 75% people. The chocolate has a very smooth finish without any bitterness to distract from the added spices.. Overall this is a phenomenal creation that I would definately buy again.
Wow! Quite simply one one the best chocolates I’ve ever had.
I gave this chocolate as a gift. If you like a mildly spicy chocolate give this a try.
Loved it!!
