Qantu

Qantu is a chocolate maker based in Montreal. Qantu was started by Elfi and Maxime in 2016. This pair fell in love with bean to bar chocolate after researching cocoa after their first plantation visit in 2014. The immense passion and pride of the cocoa producers inspired them to create bean to bar chocolate. Qantu focuses on Peruvian cacao for the moment, which is where Maxime and Elfi met over a decade ago in Elfi’s home country. The name “ Qantu” (pronounced “Kantu”) derives from the name of the national flower of Peru and Bolivia. The word comes from the native language of the Peruvian Andes, Quechua, it represents a symbol of unity and hospitality.

Ayacucho lies in Peru's south-central Andes, where steep valleys descend toward the Apurímac and Ene rivers. The lower elevations of the VRAEM area sit within Ayacucho and produce a growing share of Peruvian cacao, much of it Criollo-influenced and grown by smallholder farmers.

Chuncho

Chuncho is an ancient Criollo strain native to Peru, representing some of the oldest cultivated cacao genetics in South America. Makers value it for its rarity and its connection to pre-Columbian cacao cultivation, making it significant for makers exploring historical and ancestral varieties. Chuncho cacao encompasses around a dozen related cultivars of the Upper Amazon Forastero group, now considered to be native to the Quillabamba Valley of central Peru. They’re believed to have been domesticated by the Matshiguenga people, whose members were ancestral inhabitants of the Valley. Chuncho trees bear small yellow fruits with small beans (less than 1g per bean), known for their high fat content and very high-altitude growing region (400m-1400m).

Bold, sour, and creamy

A well done 100% bar with a very pleasing texture and aroma. The taste is a bit too sour for my personal preference, but deserves 5-stars regardless.

Nice 100% bar

This was my first 100% bar. My wife went sugar free, so I found this and a few other bars that would work for her. She isn't a fan of the 100% bars. I am not big on them either, but please read on.

I am going to give this a 5☆ rating. It is an Academy of Chocolate Gold award winner (2018), and is rated highly by others here. So I trust their opinions on what makes for a good 100% bar. As someone who is new to 100% bars, I will say that it is much different than a lower % bar. The taste is much different and the creaminess/smoothness is less pronounced than the lower % bars. But that doesn't make it bad - just different. It makes you appreciate the difference and understand the flavor of chocolate. This bar is smooth - it is not bitter. I found the best time to eat it is after a meal. The flavor is earthy with some light floral notes. And the chocolate flavor / taste stays in your mouth longer than a lower % bar.

So while I can't say this (or any 100% bar...none that I have tried so far) will be something I crave or will be my 'go-to' bar, it wasn't bad. It was educational and different. If you like 100% bars, then I would recommend this one to you.

A standout 100%

I eat a lot of 100% bars, and this one is really original. Although it has the very "bright" notes that are characteristic of 100% bars, it's less bitter and has lovely notes of cinnamon.

A unique standout among the 100 percent cacao bars. Immediately fruit-forward, but not simplistic, and without any hint of bitterness. The unfolding of the flavor really takes your sense of taste on an extended and complex journey. An absolutely wonderful experience in your mouth that lingers for a long time. I highly recommend you give this bar a try.

Flavorful 100%

Before breaking a little bite, just smell it, you can sense the unique light aroma from the chocolate. Texture is smooth and has notes of nuts and and earthy flavor with mild acidity as is described.

one of my favorites

this 100% chocolate bar is surprisingly sweet and flavorful. similar to the Soma brand and Fruition brand in many ways with it's level of palatability, which is hard to achieve with a 100% chocolate bar. I rank this among the top and it's a great place to start for the newcomer to 100% chocolate land.
