In this chocolate, they're highlighting the amazing flavor and aroma of high quality vanilla beans. Made with Madagascar Bourbon Vanilla, this chocolate is rich, dark and creamy with a floral, buttery aroma. While they typically believe in letting the true flavor of the cacao shine through without the addition of vanilla, in this chocolate we're highlighting the amazing flavors of bourbon vanilla. They're using whole vanilla beans from Madagascar and combining them with their Mid Mountain Blend chocolate. If you're curious about the higher price point of this bar, it all has to do with the cost of vanilla. They're adding a relatively high amount of pure vanilla to this chocolate, and bourbon vanilla from Madagascar just so happens to be one of the most expensive ingredients in the world. Depending on the year, this type of vanilla can range from $200 to $400 per pound.

Ritual Chocolate

Ritual Chocolate, based in Utah, owned by Robbie Stout and Anna Davies are masters at balancing sugar and cacao. This sophisticated chocolate maker only uses those two ingredients to make their chocolate, with no added soy, butter or vanilla. We appreciate Ritual for their purposeful variations in cacao percentage from harvest to harvest to produce the best tasting chocolate. Ritual is crafted on European methods with an American style. Their journey began back in 2008 in Boulder, Colorado, both cyclists, they noticed that both coffee and cycling companies focused on cyclists. They wondered why and sampled over 20 different cups of coffee with an expert. Robbie was surprised to learn how every cup tastes different due to the roast and where it was grown. From there they learned about terroir and thought well, everyone is doing coffee; why not chocolate! They already ate a little pieces of chocolate every night after dinner, it was their ‘ritual’. Robbie and Anna spent the following years in Costa Rica after taking ownership of an old chocolate factory. They meticulously studied the craft of chocolate, reading every manual on machinery and everything in between. Their attention to detail and dedication has really demonstrated through their award winning chocolate bars.

Ritual Vanilla Bar 70%

The snap is sharp. The scents are rich and warm: easter-egg like. What I love about this bar is that the nose is the opposite of the palate. The blend they use has some kind of fruitness like dried-strawberry/fresh-cherries which creates a lovely juicy contrast with the sweet, creamy, and mellow notes of the vanilla bourbon Madagascar. I don` t find any bitterness or astringency. The aftertaste is short though: persistent red fruits aroma at the bottom of your throat and velvety vanilla undertones all over your palate.

Had trouble finding certain flavor notes

When I ordered this bar, I thought I was going to get a lot of bourbon vanilla, but I did not. The chocolate is very smooth, but also very tart and a tad on the bitter side. I got a lot of herbal notes. The texture of the chocolate was very smooth, glossy and had a great snap, but this is not one I would order again, although I would try this brand again because of the quality.

Yum! I can see why so many chocolatiers use vanilla to mask impurities in their chocolate. (To be clear -- that's not what's happening here.) This tastes exactly like a Ghirardelli hot fudge sundae. What a yummy, decadent flavor. And so addictive! I wanted to gobble the entire bar after one bite. (I didn't do it, but I wanted to.)

This is truly delicious! The vanilla is definitely the centerpiece here which is really great especially given the darkness of the bar (often white chocolate is used to have the vanilla standout)

Fruity Ritual chocolate overpowers the more delicate vanilla

I love the combination of chocolate and vanilla bean, but Ritual's chocolate is so bright and fruit-forward that for me the vanilla experience was somewhat overpowered. Ritual's chocolates are very firm and hard, so if you like meltier, cocoa-butter forward chocolates, this might not be for you. Their chocolate is delicious, but I wished the vanilla could shine more in this bar.
