The original idea was to infuse cacao with oak. After an inspired talk with friends at Stratus Vineyards in Niagara-on-the-Lake, winemaker J-L Groux sent over an oak barrel partially filled with the residual yeast and grape skins from the winemaking process known as “lees”. They roasted up a batch of cacao beans and added the roasted nibs to the barrel, rolling it around to make sure things were well mixed.
3 months later, an aromatic wine infused cacao emerged. After grinding the nibs, refining and conching—the Stratus bar was born, an experimental and elegant chocolate bar with the subtle flavor of a Stratus wine.

Soma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.
Flavor profile: black plum, blackberry, and mulberry (reminiscent of dried goji berries and figs) fruits wine-like cocktail studded with honeysuckle flowers nectar as its ceiling...crisscrossed by a delicate bouquet of Garni herbs (sage flavor: faintly piney, with subtle citrus notes), chocolate pudding filling mouthfeel, aged balsamic glaze, wild honey undertones, licorice root powder delightful warm sense to accompany the guest in a real journey to discover unforgettable flavors. The "bleu cheese" makes its entrance towards the end with a typical sharp tangy flavor enhanced by tellicherry peppercorns complexity. But only in the aftertaste, you will note a marked increase of a cheese-like savory palate. It is a work of high quality with countless aromatic niceties and a pleasant and full melodic élan. Seriously, enjoy this bar at least once in your life!
