Maker
CacaotecaCacaoteca is a tree to bar chocolate maker from Miches, Dominican Republic. Back in 2015, owner Coral was surprised by the exceptional taste of Dominican cacao. She realized that Dominican cacao is considered some of the best in the world, there weren’t any chocolate makers in the Dominican Republic taking advantage of its amazing crop! Using locally sourced cacao beans that are only a short few hours away from Cacaoteca’s location, it has a positive impact on the Dominican economy, since cacao is mostly exported. Cacaoteca works directly with its farmers, and train the farmers how to dry the beans ensuring top quality. Cacaoteca also provides fair pay for the high quality cacao and showcase the flavors of Dominican cacao.
Cacao Region
Duarte, Dominican RepublicDuarte is a northern province of the Dominican Republic, named after Juan Pablo Duarte, the founder of the country. The province is located in the eastern portion of the Cibao Valley, and finds its economic base in both commercial industry & processing, and agriculture. Duarte grows over two-thirds of the Dominican Republic’s exported cacao, as well as ~60% of the rice consumed within the country; other crops include coffee, tobacco, and bananas.
Cacao Estate
APROCACIAPROCACI, or the Asociación de Productores de Cacao del Cibao, is an association of cacao producers in the northern Dominican Republic. The association was founded in 1997, and now works with hundreds of cacao farmers in the provinces of Salcedo and Duarte. Each farmer is in charge of processing and transporting their own cacao, with a small post-harvest processing facility made available by the association to farmers not-yet equipped to do it on their own land. Most of APROCACI’s farmers use organic farming methods, with 900+ tons of organic-certified cacao produced by the association each year.
JJ.N.Solid single origin bar, not my favorite but would eat again
CCharlotteThe packaging is lovely - a seascape in a frame. I love the mission of the brand too! My brother translated some of the Spanish and told me that they help differently abled people in their community and give them work, which warms my shriveled little heart. The bar itself is fruity, lush and bold. Raisin and nut flavors and an intriguing subtle menthol coolness at the end.
LLee S.T.Earthy, hints of red fruit and coffee. Smooth, slow melt, lightly creamy. No bitterness. I really enjoyed this rich fudgey melting bar. Will have more
MMariThe flavors of this bar are deep and delicious. The aroma is very earthy, and reminds me a bit of the classic Theo dark bars. There is a strong liqueur quality to it. It is nutty with a touch of menthol coolness. I detect an occasional tiny nib fragment (as in the size of a grain of salt), but it is otherwise a pretty smooth texture. Worth trying!
RR C.I received this as part of the monthly club (If you’re not a member, what are you waiting for? It’ll change your life for the better!). With the exception of the nutritional facts on the sticker, all text is in Spanish, and my Spanish is very basic, so I started this bar with no expectations. I was pleasantly surprised. It has no added cocoa butter, but it’s still smooth. It’s lightly fruity but dark and luscious. This is a bar that I may not have bought, but because of the club, I will buy this again. What the company does for the community is a bonus, and I also used the artwork In paper crafting.
