It is a little misleading to call Karkar an island, as it is in fact one large volcano. 60 miles across, and visible from over 50 miles away. But the rich soil you find here on the sides of the volcano is ideal for growing the finest cocoa, with its bold flavors, reminiscent of dates, walnut and red fruits.

Firetree Chocolate sources their beans from remote islands with rich volcanic soil for some very unique tasting chocolate. Their name firetree, is a nick name for the flame hued pods found on the cocoa trees that are found on these volcanic islands. Each bar is made with single estate cacao, lending to the incredibly distinct taste of each chocolate variety.

Karkar, Papua New Guinea

Karkar is an oval-shaped volcanic island located in the Bismarck Sea, about 20 miles north of mainland Papua New Guinea. In the center of the island is an active volcano, the last recorded eruption of which took place in 2014. Thanks to the fertile volcanic soil, Karkar easily grows cash crops such as betel nut, mustard plant, and lime, but the main exports are coconut and cacao. A single road runs around the entire length of the island.

A very tasty bar!

This was my first time trying Firetree and I would definitely want to taste more of their bars in the future for sure!
Nose of vanilla, truffle, earthy and spice.
Tastes of white grape, earthy, coconut water and very mild tobacco notes.

The scents are ashy and spicy (I dare to say almost like Vietnam origin). The flavor is complex but not invasive. The ashy taste is always present with incredible wild mushroom notes as truffle mushroom (earthy, nutty, savory, oaky, sweet) followed by a slightly dairy background. You can think of a dark milk bar. Bitterness, astringency or acidity are absent. In the end, this bar sweet-talks to you about the volcanic soil it came from. A real "warm" aromatic tasting experience.

If you like mushroom flavor, you are good to go! Perfect for cheese pairings. Side note, lecithin but give it a chance.
