A trained chef by profession, the founder Mikkel Friis-Holm has owned a restaurant, a bakery, and then became a distributor for Scharffen Berger chocolate in Scandinavia. This passion for chocolate evolved into a deeper interest, and lead to the formation of a chocolate company in 2008. Friis Holm has a very particular approach when crafting his bars. All of his chocolate bars are kept the same, from the origin, the bean type, roast and percentage, except for one key difference during the refining process; the number of times the cocoa beans are turned. Resulting in dramatically different tasting notes in the chocolate bars. Give Friis Holm a try and taste the experience for yourself!

Matagalpa, NicaraguaAfter Managua, Matagalpa is the most populated department in Nicaragua, known primarily for its high quality coffee. But beyond the coffee, Matagalpa also supplies most of the country’s rice, and its diverse climes are perfect for growing beans and cacao, as well as raising cattle. Most of the region’s population is centered upon the city of the same name, so the rural regions surrounding it are responsible for a large amount of the country’s food production & natural beauty.
I found this Cocoa 100% and it is great for my brain health. I love it!

Well rounded flavor, but the added cocoa butter leaves a film that is too greasy for my taste.
did you miss your coffee this morning? If so, a bite of this bar might suffice. It's a punch of red fruit flavor, so if you enter the ring wanting to dance, be prepared to be knocked out.
I do like 100% dark chocolate, although I've only tried a few different kinds. I appreciated the fruity notes, and the mouthfeel wasn't as chalky as I would've anticipated. However, maybe it was too intense for me and a bit too bitter. I still thought it was a good bar, but I wouldn't buy it again. I ended up melting the rest on toast and adding maple syrup and sea salt...
