Enjoy a slice of Mayan culture. The Mayans, the great ancestors of chocolate culture, lived in the region of Yucatan in the south and southeast of Mexico as well as areas of Belize, Guatemala and Honduras. They still live in Belize today and grow cacao, guarding centuries of knowledge passed down to them and enjoy their cacao as drinking chocolate. Josef Zotter and his family spent two weeks with the Mayan cacao farmers who live in the middle of the jungle away from the hustle and bustle of Belize City and made a documentary film of their journey. A dark chocolate with 82% cacao from the Toledo Cacao Growers: perfect, authentic and simply breathtaking.

ZotterZotter was started by a husband and wife team in 1987. They have made many strides over the last decade tucked away in a picturesque rolling hills landscape of Austria. Zotter is the only company in Europe that uses all organic and Fair Trade ingredients. They also have sustainable business practices, using solar and geothermal energy to run their entire production facility, and use packaging made from renewable sources. Zotter's philosophy has garnered them many awards both for their business success and chocolate making. They are a family business that adhere to family principles. Zotter first produced their "hand scooped" bars with couverture from Valrhona and Callebaut but always dreamed of making their own chocolate, and in 2006 this became a reality. Cacao Region
Toledo, BelizeToledo is the southernmost district of Belize, home to some of the country’s most pristine rainforests, extensive cave networks, coastal lowland plains, and small offshore islands. Punta Gorda, the district capital, hosts a 3-day chocolate festival each May, which has helped build tourist interest in the region. Toledo is home to aroun 30,000 people from a wide range of cultures, including Creole, Mopan & Q'eqchi Maya, the Garifuna, Mennonites, and Mestizos; all of them rely primarily upon agriculture or fishing. Primary crops grown include beans, corn, coffee, yams, and plantains.
For being dark is was nice and smooth. My fiancé and I really enjoyed this one
Dried fruit aroma with an earthy flavor of roasted nuts. Silky texture. A bit tannic. Not my favorite Belize bar, but good.
