Maker

Marou Chocolate

Marou Chocolat was started by two Frenchmen Samuel Maruta and Vincent Mourou in Saigon. After a camping trip in Vietnam, that left them venturing onto a cacao farm, they were sold on their next adventure, chocolate. They only had minimal everyday kitchen appliances at the time and started testing how to make chocolate in Sam’s kitchen. They work closely with farmers and slow roast the beans in small batches to get the natural flavors from its terroir and let it do all the work. They are the first bean to bar Vietnamese chocolate makers. Their bars captivate flavors from each region they receive their cacao beans from.

Cacao Region

Ben Tre, Vietnam

Ben Tre is a province in the Mekong Delta area of southern Vietnam, southwest of Ho Chi Minh City. During the Tet Offensive in 1968, Ben Tre City was nearly destroyed by anti-communist bombing, but the province has since recovered, now home to a strong tourism market due to its location along the Mekong Delta. Otherwise, much of the region's economy is based in rice production and tropical agriculture, including notable amounts of coconut and cacao.

winter spice

The first bite tastes like biting into a chocolate covered espresso bean. Then it’s immediately followed by a strong flavor of winter spice: cardamom, clove, nutmeg, and cinnamon. Felt like drinking a winter spice tea. Not too bitter—balanced sweetness and smoothness. Delicious!

One of my favorites

VERY smooth and slightly spicy. This one has red fruits, but keeps cacao. The chocolate is about 1/2 the thickness as most "bars", and maybe this makes it melt more? Marou has been making its way into my favorite chocolatiers.
