The first Mission chocolate bar made with cacao from the Brazilian Amazon. The notes of this bar are very distinct from all the cocoa that comes from Bahia, a very pleasant surprise.In the last 5 years that Arcelia the chocolate maker has been living in Brazil, she has dedicated her chocolate production to working with cacao from Bahia because Bahia is a cacao producing, well-oiled machine. Always reliable and dependable. The opposite of what occurs in the Amazon Rainforest. Cocoa producers are always at a risk of harsh weather and travel delays, making cocoa production quality a coin toss, and storing and shipping cocoa unpredictable. So please enjoy while it lasts!

Arcelia Gallardo the founder/maker has previously trained as a chocolatier, opened a chocolate shop in California, and also trained as a bean to bar maker at Dandelion Chocolate. Arcelia has taken strides to expand the bean to bar movement in Brazil, working with farmers on process, and also helped initiate the Association of Bean to Bar Brasil Makers.

Collection description: Bahia is one of the largest states of Brazil, located in the east, along the Atlantic coast. Once a monarchial stronghold dominated by slave-centric agriculture and ranching, Bahia is now a domestic manufacturing center and the focal point of Brazil’s re-entry into the fine cacao market. The region was once the largest cacao producer in the country, so reputed that a portion of southern Bahia was nicknamed “Cacao Coast.” Unfortunately, bioterrorism in the 1980’s devastated the country’s crop over the course of just a decade. In the early 2010’s, a number of family farms took it upon themselves to revitalize the local fine flavor cacao industry, which continues to grow annually.
