Each bar highlights the unique taste profile from each origin country, taking you on a flavor adventure from around the world. Pralus also owns a plantation in Madagascar, so they have direct control of the quality of the beans they choose and has mastered cultivating the reputable Criollo bean. As a Master Chocolate Maker, he is one of the few makers in France to manufacture his own chocolate. The name Pralus has been around for over half a century when his father Auguste Pralus made a prominent household name in the confection world. He opened a store in 1948 and has been recognized with many awards and merits. Since then Pralus has set the bar high for his sense of creativity and skilled chocolate making.
As its name says, infernal bar! You can’t resist the temptation to finish the bar in 1 consumption even though 160g per bar. The pistachio bar is the least sugary one among other Pralus’s praline chocolates, and it has whole pistachios filled in the paste covered with 75% chocolate that has a dark and sour taste perfectly balancing the sweetness from the praline. Highly recommended!
I bought this bar both because of the reviews and because it was promoted by Bar and Cocoa. I spend a portion of each year in Italy and my go-to gelato is pistacchio, so I was hoping to re-live that in this bar. Unfortunately, the texture of the filling is so solid and gummy that one cannot feel like they are eating ground pistachios at all; you could imagine being to create this same filling with non-nut ingredients plus artificial pistachio flavor! I suspect the maker was trying for a very creamy filling and that desire won out over other considerations. This bar would be a ton better if this pistachios were not ground to such a fine paste. This one is not for me at all. (My husband is not a chocolate fiend like I am but he just said "I don't like it".)
