Qantu

Qantu is a chocolate maker based in Montreal. Qantu was started by Elfi and Maxime in 2016. This pair fell in love with bean to bar chocolate after researching cocoa after their first plantation visit in 2014. The immense passion and pride of the cocoa producers inspired them to create bean to bar chocolate. Qantu focuses on Peruvian cacao for the moment, which is where Maxime and Elfi met over a decade ago in Elfi’s home country. The name “ Qantu” (pronounced “Kantu”) derives from the name of the national flower of Peru and Bolivia. The word comes from the native language of the Peruvian Andes, Quechua, it represents a symbol of unity and hospitality.

Wonderful

Qantu is a now favorite brand which Bar and Cocoa introduced me to. The addition of the pure maple sugar is exquisite. It quickly yet subtly comes across and enhances the senses. It is really wonderful. I highly recommend it.

Flavor profile: you can sense the mouthwatering texture by receiving an electrical message directly to the brain of maple, sacher-torte cake with apricot preserves, salted caramel pudding, exceptional "caramelle al malto di riso" flavor, caramelized toasted nuts, light saltiness combined with sea breeze vibes. Hints of fragrant and slightly bitter crystallized lilac note in the end on the tip of the tongue with a distinctive citrusy taste and floral-pungent overtones. Maple-chocolate finish showing a more biting savory dry back taste. This is such an eye-opening tasting experience that allows us to understand the plight of the craft chocolate movement and the varied responses that different artisan makers have towards the same market demands; and in all of these initiatives, this is absolutely the best salt-inclusion dark chocolate bar I have ever tried and more. As a maple sugar enthusiast, I sampled several options but just Qantu developed the perfect synergy of flavors between cacao origin, sugar and salt that provides an unparalleled enjoyment for the palate. I would have given a Gold Award as a certified chocolate judge without any doubt. Fair warning, the lightweight mouthfeel weakens the self-control and the mind might open up at any moment to swallow every bit of it with relish. Enjoy!

This is another amazing bar from Canadian chocolate maker Qantu. It takes a few seconds but then the sweetness and taste of the maple comes in. The bar finishes up with another note of bitterness on top. Don't miss out on this.
