Maker

SOMA Chocolatemaker

Soma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.

Cacao Region

Sambirano Valley, Madagascar

Perhaps the most famous growing region in the world, northern Madagascar's Sambirano Valley is known for its incredibly fruity cacao and aromatic herbs & spices. Over the past few decades three main plantations have popped up in the area to supply cacao to chocolate makers around the world, as well as some of the world's most valuable botanicals, namely vanilla, ylang-ylang, and essential oil extracts.

Cacao Estate

Akesson Estate

Perhaps one of the most famous origins in the world, Akesson’s Estate consists of several individual farms in northwestern Madagascar’s Sambirano Valley. The most prolific of these is certainly Bejofo Estate, which alone produces around 300 tons of cocoa each year. Over the last decade, Malagasy cacao (cacao grown on Madagascar) has earned a reputation for fruity, almost juicy cacao beans, which transform into some of the most unique chocolate in the world. All of the cacao grown on Akesson Estate is organic-certified.

Soma Madagascar

Flavor profile: candied cherry, honey-sweetened peanut butter, sweet raspberry tart undertones, pomelo juicy mouthfeel towards the end with its distinctive delicate floral taste (without the overpowering bitterness and sour punch of the grapefruit) delivering a delightful citrusy finish. After my second tasting, I noticed a quite unique sensation: classic tartlets with pastry cream and fresh fruit pieces brushed with neutral glaze.
This bar pleasantly displays the enchanting "reddish colored" fruity garden of Madagascar cacao that stands out thanks to the maker`s packaging choice. Recommended.
