Cacaosuyo is a "tree to bar" Peruvian chocolate maker with 100% traceability. They pay careful attention to the cacao they use at all stages from harvest, fermentation to the processing of cacao to make the best possible chocolate. Cacaosuyo is so particular about their beans to ensure the best quality that their beans are brought to dedicated labs for analysis. The cacao beans are classified by each and every strain, to detect new flavor profiles and discovering rare varieties. This is a crucial step because this allows rare varieties to become protected which would have otherwise been lost.   Owned by Eduardo Lanfranco and Samir Giha, they craft their chocolate in Lima, Peru using only Peruvian chocolate.

Cuzco bar-I was delighted by the packaging of this bar and brand, they really take you on a adventure before even tasting the chocolate 😁
It made me feel connected to the origin and history of the terroir.

🎁 Inside the packaging, we learn more about the Incan Empire and their values, how they saw the world, and how they revered cacao as a gift from Pachamama (Mother Earth).

🕵🏼As part of their brand and mission, Cacaosuyo sources cacao only from Peru, from the Four Suyos (four quarters) of what was the Incan Empire--with Cuzco at the center of the them. 🔬They carefully test, track and preserve as many strains and varieties of cacao possible to protect what would otherwise be lost. A noble mission in my humble opinion ❤

Tasting notes: Pomegranate, cherry 🍒, honey 🍯 and rosemary 🌿. All mild in their intensity, I was also amazed at the complete lack of bitterness and astringency in this 80% bar.

☝🏼If you want to win that age-old argument against the team "dark chocolate is way too intense and bitter"--give them a bite of this. You'll blow their minds, promise 💥😯

Cacaosuyo Mini Bars

Little boxes of pure luxury. Astoundingly good chocolate. Beautifully packaged. Big squares divided in half for rationing purposes methinks, but I can never stop myself.
