Chocolarder is a small batch chocolate maker in Cornwall, UK. The founder Mike Longman, a former pastry chef has made award winning single origin bars since 2012. Chocolarder believes in the ‘ethical transparency’, which starts right at bean to bar. Longman ensures to build meaningful relationships with the farmers with the direct trade model to make sure farmers are being recognized for their hard work. Chocolarder picks only the finest beans to be produced into the chocolate bars. Chocolarder also believes that less is more with ingredients providing a top quality organic experience with health benefits as well.

Chuno happens to be a mixed hybrid, shown to have genetic heritage of roughly one-quarter criollo, one-half amelonado, and one-quarter mixed amongst the other clusters. It also has a relatively small but strong growing region, found growing semi-wild in northern Nicaragua. Chuno is one of just sixteen cacaos to be certified by the Heirloom Cacao Preservation Initiative, an initiative of the Fine Chocolate & Cacao Institute. The HCP identifies ancient & indigenous cacao varietals which hold significant historic, cultural, botanical, geographical, and flavor value for the global industry, which the very fruity chuno cacao does.

Nice honey flavor, quite sweet

Not surprisingly, it's a sweet bar. There are tiny bits of honeycomb that aren't exactly crunchy but are noticeable. Slight grain to the bar which I also found in the Wild Gorse Flower variety.

It was okay

I really appreciated the ethically sourced ingredients, bean to bar process, and story regarding the Cornish Black Bees. This chocolate bar had been on my "to buy" list for several months and I even purchased the no-melt guarantee, which held up. The packaging was lovely but the chocolate itself wasn't spectacular and the inclusions were microscopic. There was a richness or depth to the bar in a sense that upon first bite it tasted like dark chocolate, but there was very mild and infrequent moments of honey and I detected no toffee. It was a rather plain bar, but my neighbor thought it was amazing.

I look forward to another purchase from Bar & Cocoa.

My favorite chocolate with honey

When you let this melt in your mouth, you can really feel the honey pieces too. It's like having chewy candy without the added worry that it's going to stick to your teeth and cause cavities. One of my go to bars for gifts as well. It's always great!

I must admit that I was a bit suspicious about buying British chocolate but the honey as a sweetener made me curious. This immediately turned into one of my favorite chocolate bars. Incredibly smooth and highly addictive!
