François Pralus

François Pralus is a French chocolate maker has been making chocolate since 1991. He has one of the most diverse line of single origin bars. Each bar highlights the unique taste profile from each origin country, taking you on a flavor adventure from around the world. Pralus also owns a plantation in Madagascar, so they have direct control of the quality of the beans they choose and has mastered cultivating the reputable Criollo bean. As a Master Chocolate Maker, he is one of the few makers in France to manufacture his own chocolate. The name Pralus has been around for over half a century when his father Auguste Pralus made a prominent household name in the confection world. He opened a store in 1948 and has been recognized with many awards and merits. Since then Pralus has set the bar high for his sense of creativity and skilled chocolate making.

A well-blended texture

This chocolate has surprised me with its well-blended texture. I did not feel any bitterness at all. The chocolate definitely presents itself as intense spicy cocoa.

Can't go wrong with Pralus bars... Perou was delicious!

As I commented before... any of the Pralus bars sourced from any part of the cocoa bean growing world are wonderful. I just ordered the variety/sampler pack, one for me and one for each of my families for gifts...

Not a favorite.

I'll preface my comments by acknowledging that I tend to shy away from over 70% chocolate bars. But if you don't stretch yourself, you will miss a truly superb dark chocolate like the exquisite Belvie Hao Moc 80% bar. I never buy fewer than 10 bars at a time and except for Qantu Chucho, which is my favorite chocolate bar, I typically enjoy experimenting with the flavors of bars I have not tried before. This was my least favorite of my last order, and not by a little. I was persuaded by the other reviewers to repeatedly return to it and make sure I wasn't missing something. Each palate is unique. Mine remains disappointed.
