Based in Vietnam, Belvie Chocolate is a bean to bar maker that handcrafts their chocolate bars with Belgian techniques. They source cacao from all over Vietnam, then stone grind and produce their chocolate in small batches. Their award winning chocolate also contributes to the preservation of cacao trees in Vietnam. They take the husks of the cacao as fertilizer for the trees to help maintain a green environment. Belvie uses Trinitario cacao beans only from local farmers to help restore cacao trees throughout Vietnam and mostly importantly, to help support the farmers.

Dong Nai is a province in southeastern Vietnam with over 1,000 hectares of cacao and the country's highest yields at 26.5 tons per hectare. The fertile soils and skilled farmers support integrated production-to-processing chains, with local companies processing cacao into chocolate, liquor, and powder. The region's sustainable practices include biochar production from pod husks.

good bar, but not Belvie's best

I liked this bar, and might buy it again, but I preferred their Ben Tre, Lam Dong and Tien Giang, all three of which I would buy again in a heartbeat.

Gorgeous. Smoky aroma. Silky mouthfeel. Lightly spicy layered flavor explosion. Flows through blanched almond, cream, coffee, pepper and mountain air against a backdrop of floral honey and finishing with a little grapefruit tang.
