To create Araguani, they, at Valrhona, selected Venezuela's Sur del Lago region and its famously rich terroir to give the couverture a real aromatic complexity. 100% cocoa singularly reinforces chocolate flavor, enriching it as a taste experience to give a remarkable power. From its strikingly bitter essence, Araguani offers a rich and complex aromatic profile featuring warm notes (raisins, chestnuts) and hints of licorice.

Valrhona is recognized as one of the greatest bean to bar chocolate makers, and founded the world renowned Ecole du Grand Chocolat school, of which many excellent chocolate makers are graduates, including many featured in our Shop and Chocolate Club. Valrhona has been producing chocolate in the small village of Tain L’Hermitage, France since 1922. From the beginning, they have been dedicated to create the unique, artisan quality chocolate with complex, balanced and consistent flavors. With years of working towards perfecting techniques for enhancing the flavor of cocoa beans. In order to master the art of craft chocolate, they have their own plantations in Venezuela and the Dominican Republic.

Cacao Region

Sur Del Lago, Venezuela

Translated directly as “South of the Lake,” Sur Del Lago is a region of western Venezuela which touches upon four separate states. The name refers to Lake Maracaibo, and the region as a whole is often referred to as the cradle of criollo cacao, thanks to its many native varietals of fine flavor criollo cacao. Amongst these criollos are the Guasare and Porcelana varietals, some of the rarest cacaos in the world.

Cacao Strain

Sur Del Lago

Sur Del Lago is unusual in that it’s more of a cacao origin type than a cacao strain. Over the centuries, the type “Sur Del Lago”— which translates as “south of the lake”— has evolved as a micro-origin within Venezuela, referring most often to cacao from the region southwest of Lake Maracaibo, near the border with Colombia. The blend of different criollo-influenced native varietals that grow there have been isolated enough that they’ve come to be one of the most highly-prized Venezuelan origins out there. True Sur Del Lago cacao has a high proportion of white beans (indicative of its criollo heritage), and a very nutty character with high potential for complexity.
