FrescoFresco is a small craft chocolate maker in Lynden, Washington. The founder of Fresco, Rob Anderson, releases several combinations of roasting and conch profiles to create different variation bars from the same beans. Anderson, originally a computer scientist, took a trip to Washington and visited a chocolate shop and took a tour which initially sparked his chocolate interest. Since then, Anderson created his own machines to make small batches of test chocolate. While only using three ingredients for his bars; cacao beans, cane sugar and cacao butter, Fresco’s flavor range is uniquely diverse. He chose the name Fresco meaning fresh in Italian, which could translate into fresh taste, fresh ideas, or a fresh approach to chocolate making.
Cacao Region
Suhum, GhanaSuhum is a district in southern Ghana, about an hour outside of the country’s capital of Accra. The region is largely rural, with most villagers relying upon agriculture, mainly cacao. Due to government restrictions, throughout the country cacao must be processed individually by the farmer before being sold to an association, limiting locals’ potential to increase their income. This means that even if farmers can afford to become organic or Fair Trade certified, their earning potential is still limited by current market prices. Luckily, a regional cooperative in Suhum has partnered with cacao importer Uncommon Cacao to bring high quality, traceable Ghanaian cacao to the world, and bring a higher price to the cacao farmers.
Cacao Estate
ABOCFAThis farmer cooperative is based in southern Ghana, and is known for producing the highest quality traceable cacao in the region. It’s one of the cacaos imported by Uncommon Cacao, a US-based cacao distributor. ABOCFA’s beans are different from most specialty cacao origins in that they aren’t centrally fermented in one location, as The Ghana Cocoa Board doesn’t permit the sale or purchase of wet cacao. ABOCFA’s network contains 13 communities of farmers, each of which has three representatives who report directly to the ABOCFA cooperative leadership for annual general meetings. The cooperative also democratically decides where quality and Fair Trade premiums go every year. Their cacao has a classically fudgy and rich flavor, chocolaty without being bitter or astringent. I find Fresco's 100% bars to be among the best, and this one is no exception. The light roast brings out bright flavors. Highly recommended.
Wanted to try chocolate from the country that provides over 60% of the world’s cocoa. It was delicious.
Even though it’s 100%, it lacks the either the bitterness or acidity usually found in dark chocolate, because of the light roast and conche. The chocolate appears extremely dark in color but it taste like coconut to me, very interesting one. Would recommend it to someone who dislike bitterness but look for zero sugar chocolate
