Valrhona Jivara 40% is a milk chocolate with real cocoa presence, sold here as 250g of baking feves. When Valrhona created it in 1995, it was one of the first milk chocolates to put such a robust, cocoa-rich flavor front and center, and it remains a favorite of pastry professionals.
Tasting notes: A dominant milky note balanced by malt, a distinct vanilla note and pronounced cocoa. Creamy in texture.
Cacao origin: A blend of cocoa beans with flavor profiles typical of Ecuador and Ghana, selected and blended for a consistent result.
Pairing ideas: Valrhona suggests dried fruits, tonka bean and salted butter caramel, and it works well against tangy red fruits, passion fruit or mango. For something more unexpected, try it with basil or violet.
